PB Keto - Día 39

Oh my goodness!! YOU GUYS!!! Let me show you what I had missed SOOO much!! ... besides my person of course! 😉

Café being brought up to me to the room while I journal!!!! 💖💖💖💖😍😍🙏🙏 and yes, the gym! 🤗

So after we went to the gym, I made a protein Avocado Blueberry Shake with some blackberries! I also put some vanilla extract, cinnamon, almonds and coconut milk. I topped it off with some pecans and cinnamon! 😍😋😋

We went to a new (for us) Farmer's Market that was more like a fair! It was ginormous and awesome!! We got some groceries and a snack... however, we didn't eat much of it be cause it was fried... it didn't seem THAT fried at plain sight! 😝😂😂

And of course, didn't use the dressing. I did enjoy A LOT the cashews! He he he

Since we didn't really eat, we decided to go somewhere for breakfast and at the same time buy coffee to have at home. So we went to Sunisa's Coffee House, right off the old city and enjoyed the following! 👇

Soy Milk Latte!! 😍😍😍 I LOOVE you Thailand HAHAHAHA ... still remember how hard it was to get something like this in Myanmar... AND... dominos!! I lost... 😂😂 weeellll Amor is actually quite good at pretty much EVERYTHING! 😉

Eggs Benedict!!! 😍😍😍 of course I didn't eat the papas aka potatoes and I couldn't finish the eggs, so D ate one ... hahaha I know... small stomach! 😝

During the afternoon, I was catching up with my blog (this one! Lol) since I couldn't do much of it when I was in Myanmar and Mr D. Aka Mr. Awesomeness, brings this up to me! 😍😍

Dinner time! Let me start with:

I MISSED MY KITCHEN!!! 😂😂 and being able to cook whatever I want! Lol

SOOOO... that being said, creativity kicked in again, just like every time I go in the kitchen. D brought a small pumpkin at the farmer's market saying "I bought it so you can cook this for me" 🙀😂😂 ROFL!

And it's quite tiny and cute! SOOO I made Pumpkin Smashed. I looked up some recipes but they didn't really convinced me, so I just added 1/4 of a cup of Coconut Milk, salt, pepper and garlic powder! DELICIOUS!! 👌👌😋😋😋😍

I steamed it first and used a fork to smash it keeping the skin. Truly, truly DELISH! and nope, we didn't eat it all, perhaps half ... if that.

Then... we had bought zucchini at the market so I made some zucchini fries! I kinda messed up a bit and mixed up the dry ingredients with the wet ones... lol ... as I was doing this I thought it was strange since I know when you wanna fry something, in order for it to be crunchy, you first dip it in something wet and THEN on a dry concoction... however, I made it work and it was DELISH!!! this is the recipe I used for that 👇

Instead of .among the spicy tomato mayo, I made my own version of Vegan Blue Cheese Dip, which honestly, it still surprises me how GOOOOD it is!! 🤗

I only had firm tofu, so I used that instead of the soft one. I didn't use miso paste since I didn't have it, nor onion powder and dried dill. I used the spices I had which were, besides salt and pepper, turmeric, thyme and garlic powder. I had to use coconut oil to make it more saucy like AND the key ingredient in my opinion was Dijon Mustard! That honestly did it! 😍😍😋😋

I SOO recommend it! Like I said above, I am still surprised on how good it turned out! And used it on the omelette I made on the last day (40th day which is tomorrow if you are reading this!) Which melted and made it SOOOO... cheesy like without the actual animal cheese hahaha

I also made a little salad with just leafy greens, olives and avocado. I used salt and pepper for the "dressing."

I felt like we needed more fat and a salad to balance out the carbs from the batter of the zucchini fries and the mashed pumpkin.

That is it friends!!! Tomorrow is the last day of 40 days of Plant Based Keto and it has been a pleasure and a SUPER DUPER GREAT success!!! He he he 😁
