PB Keto - Quinto Día
I had the GREATEST sleep last night! Totally slept like a baby. I'm not sure if its because the two nights before I had shitty sleep, or because I had some chamomile tea and then did yin yoga last night or because I had major releases last night, or because I took magnesium and zinc right before going to bed OR a combination of them all. Regardless, I slept SOOO good and I'm very happy about it. I didn't even wake up like I smoked for years and had no water whatsoever and only woke up once to use the baño and went straight to bed! 😁🙌✌
I even set up my alarm clock for 5.38 am (don't ask me why, my fingers just typed the 38, so I let it be! 😂😝), but someone didn't let me get up... lol which I totally didn't mind and ended up getting out of bed at 6.30... super happy with that since I had been waking up at 8 or even 10 😱 the past days SUPER tired!
Anyways, let's talk about breakfast... Mmm yummy food! 😍😋
I wanted some matcha related thing, so I made a smoothie, because just a tea didn't seem great or satisfying enough at the moment haha but Matcha... I'm ALL about Matcha! SOOOO, here it is! 👇👇
Almond milk, hemp seeds, pumpkin seeds, sunflower microgreens, Amazing Greens, Matcha Green Tea Powder, Vinnamon, 1/ 2 tbsp coconut oil, 1/4 tpsp MCT oil, topped with cinnamon. All blended to peifection, which means there were still some crunchy things from the seeds ... mmm #Yummyness 😏😋
I am currently at the Chiang Mai immigration extending my Visa and since I am ALWAYS prepared (or try to be 99% of the time 😜), I brought the Chia Pudding I prepared yesterday 👇👇
However, to be completely honest, I am not hungry at all and I feel like I'm floating lol might be the Lakshmi Mantra I chanted for 108 before getting ready and leaving the condo... AND/OR the PB Keto Amazingness! 😌
After I got back to the condo, I wasn't hungry at all, but I felt my body needed something. I had some spoons of the chia pudding and then couldn't eat it anymore. But since something was being "craved" I decided to make something with the Almond Yogurt I had. However, at seeing the avocados in the kitchen, I immediately thought about an avocado toast lol that was my go to for anything and well... being Peruvian... avocados and bread is THE thing for breakfast and lonche, the small meal between lunch and dinner... then I thought... Man, I really wish I had an oven to make my own bread! ... mmm perhaps I'll make some pizzette today... hahaha this is how my mind is working at the moment. If that's the case, I'll have to be creative and use the stove to make the cauliflower crust, which I am completely down for the challenge... at this moment 🤣😂😂 I'll see how I feel later.
Ok, back to the food. I love some some cashews, so while I figured out if I truly wanted to eat something, I had a handful of them 👇
And then, I made an almond yogurt bowl with Cashews, different kinds of nuts, sunflower seeds, hemp seeds, Peanut Butter and sprinkled it all with cinnamon... 👇👇
Ya ok, it was good, but it wasn't satisfying whatever is going on at the moment haha
It was such an effort to eat it. I wasn't planning on finishing it until my guides told me that it was in my best interest to finish it... I made a complaining sound (😂) and said "Ok, ok!" Then they said "You know you like it that we take care of you"... in all honesty Yes, I do, but sometimes I don't wanna eat what's in front of me LOL
Well... let's go back to the satisfaction factor... I still wanted something, but I didn't want to chew on anything (does that happen to anybody else?! 🤣)... SOOO... Solution: being that I had found a documentary about Angkor Wat, and I'm such a baby, I decided to make some Matcha Green Tea Latte to drink it while I watch it (Plus hugging Fluffy aka my Unicorn and having my Peruvian blanket with me... 😜) 👇
Matcha Green Tea Latte with Almond Milk, unsweetened of course! 1/8 of MCT oil... totally had spelled it like HTC, perhaps my mind was giving me hints about THC! 😂😂 and a tiny bit of Erythritol to sweeten it... which I am not sure why I did it, I don't normally put sweeteners in my lattes or teas.. sprinkled with some Matcha to make it more presentable and beautiful hehehe 😉
SOOOO... about how I feel... haven't been hungry since yesterday afternoon. My lower back feels kinda funny; its not hurting BUT I can feel so much energy swirling around and it does feel uncomfortable. The thing is that I am also doing The Artist's Way and having major releases from an Inner Dance Immersion I did at the beginning of the month (Yup! Still lol)... that being said, it might be a combination of the 3 as well. I do feel super duper chill so I'm gonna go hug my Fluffs, have my blankie on and watch the documentary as I drink my latte 😏😘✌
We went around town for a bit and the first stop was a coffee shop to chill, eat (not me lol like I said hunger wasn't really there, although I did have a few cucumbers from D's plate... hahaha), read and draw.
I ordered and Unsweetened Iced Peach Tea, which totally reminded me AGAIN that I gotta start carrying around with me some MTC oil! Luckily D is already prepared and has a tiny bottle of it! #score 😏
When dinner time came, I guess I can say I was getting a bit hungry 😌
I really wanted a salad, so I decided to make one and something else with the leftovers, because... can't let food go to waste! I won't be able to tell you exactly what I used for it all, because I mixed some things that were already prepared and added more to it he he
Since I saw on the menu of this one restaurant in Chiang Mai, half of an avocado topped with stuff, I wanted to create my own version... SOOOO I did! 🤗 VOILÀ ! 👇👇
What's inside the avocado is, a layer of a somewhat of a guacamole, topped with the leftovers of taco lunch (Day 3), just added almonds and spinach to it and sauté it all together with a bit of Sesame Seed oil. The salad dressing was a combination of guacamole and the almonds yogurt sauce from the zucchini cauliflower fritters (day 2) and I'm pretty sure I added more avocado to it, salt and pepper. Topped the little salads and avocado with more of the dressing, sunflower microgreens, nutritional yeast and pepper. BAM! 👊 Masterpiece! 😏 he he

I am also making some coconut yogurt! 😍 I used the recipe from minimalistbaker.com
AND Matcha Coconut Ice cream. I used a recipe from the same website as a guideline and changed some things. The original recipe was for Vanilla Coconut Ice Cream. I still used vanilla extract, but of course added the Matcha Powder. Instead of sugar, I used Erythritol, but not half of cup, that seemed excessive, a bit under 1/3 of a cup, 1/2 tbsp of Coconut Oil, 1/4 tbsp of MTC oil and 1/3 of hazelnuts. I blended it all but not all the way to keep a crunchy factor 😏... mmm crunchiness! 😍😋
Ok! That's day 5! 🤗 lower back doesn't feel funny anymore so that's good! Let's see how day 6 will be!
