Buenos dΓas! π€ I hope everyone that an AMAZING sleep or day... whatever you are in the world! Yo dormΓ SΓPER bien! I had a GREAT night sleep! π I'm gonna go with... Yin Yoga, Zinc and Magnesium are such a DOOOOPE combination and aids with the sleep thingy! ALSO, the diffuser was honest night with Lavander and Tangerine... pretty sure that helped too! π So, I don't feel restless at all! The only different thing is that I just had a concert with my sneezes lol but, I'm pretty sure that is not Keto related lol that's just a Claudia thing! ππ€£π
So, since I am getting used to my new schedule, that used to be my schedule since taking my first Kundalini Yoga Training in Vegas (waking up at 5ish to do my morning routines π), I decided to truly make an effort to have my meals at the same time everyday, since my schedule has been ALL OVER the place... which means, a smoothie around, 7 or 7.30, lunch around 12.30ish PM and dinner at 6.30pm. This way I will be able to have the 12 hour fasting everyday without any problemas. π
That being said, I made a smoothie this morning that kept lingering in my mind last night and before going to bed... so I wouldn't forget it: Avocado Turmeric Ginger Smoothie! ππ to be completely honest, sometimes I COMPLETELY forget about turmeric. I have been placing it in smoothies for a bit meow, but cooking with it... I must experiment. π So here it is! πππ
Ok... perhaps not so much as a smoothie, but a smoothie parfaitish? Super creamy and tasty ... if you like ginger and turmeric that is. So ingredients: half of an avocado (I made a point we gotta eat more avocados so they don't go bad, PLUS, they are super yummy and have tons of good fats! π), homemade cashew milk, some coconut milk (totally ran out of the cashew one), ginger, turmeric, pepper, hemp seeds, sunflower seeds, a scoop of Super Greens, a hand full of sunflower microgreens, 1/2 tbsp of coconut oil and a little more of 1/4 tbsp of MCT oil (got the spelling right this time around! πππβ). Topped it with sunflower seeds, hemp seeds, almonds and sprinkled it with more turmeric and pepper! VOILΓ !π It's such a simple way of making a lazy breakfast hahaha OR if you are like me, it's the BEST way of making breakfast! Not time consuming AT ALL, no mess at all, satisfying and still feels like you are eating something since you get to use a spoon and chew, rather than just drink. Lol... I cant be the only one who thinks about these things! ππ
AANND since we already came to the conclusions that I am such a baby.. lol... I am making some fresh ginger tea (perhaps this will help with my sneezing orchestra/symphony and make my nose feel much better π) with 1/4 tbsp of Coconut Oil, so I can sip it while I write on my journal, or have it after Meditation π€πβ

Lunch time... I did have a handful of Cashews after working out... the workout made me a bit hungry and I felt a little lightheaded, SOOOO... figure a bit of nuts would help with that! π
Alright... to the point... ππ€£... made a delicious Salad, which I used Olive Oil, Balsamic Vinegar, salt and Pepper... ok, sooo... the Balsamic has DEFINITELY some sugars, which I didn't realize that while I was placing it on the salad. However, I didn't use much of it, but its OUT of the pantry hahaha
Made cauliflower mushroom burgers. I used this recipe as a guideline and added more spices and things to it, to make it more flavorful for my taste π foodbymars.com π€
Topped it with Cashew cheese spread I made π lovingitvegan.com ... again... I used it as a guideline and switched some things, because some ingredients I didn't have... and a cute little microgreen! π
Underneath it, a place some of the cashew and spinach, to make a beautiful bed for the delish burger!
I also made a drink : Mint Lime Avocado Juice. I used just a bit of Erythritol to sweeten it... it was quite delish!
Ok... do have to say that I wasnt hungry AT ALL and I didn't even finish my lunch. Probably ate 1/4 of the burger... if that... not sure if it's because my body is not used to having so many fats, or because when I cook, I gotta try what I'm making constantly, but it's not like I was eating so much of it. BUT the cashew cheese IS quite filling... so... dunno! π€·ββοΈ
I did however, had a bit of the Matcha Hazelnut Coconut Ice Cream I made, because... there is ALWAYS room for dessert lol
A tad later, I wanted something... again the not chewing kind ... PLOP! So I had some Almond Milk as I chilled with the Fluffs π... yes yes yes... lo sΓ©... I'm such a kid! π
We decided to go to the movies to watch Bohemian Rhapsody... TOTALLY recommend it!!! The dude from Mr. Robot KILLS it!! I truly was Super DUPER impressed with him! And wondered, how long and how much he practiced to get ALL those moves right!! ππ
That being said, we ate at the Maya Mall π
This time, I DID remember to bring the oil with us! πππ #Yayness
D ordered some broccoli deal dish and I, Tofu and greens stir fry, and added mushrooms to the equation. We made sure to say no sugar, since Thais LOOOOVE placing sugar on pretty much EVERYTHING and sprinkled some oil in our dishes. Pretty good π, can't lie about it!
Before going to bed, I had a bit of Pistachio Milk! Mmmm luckily the grocery store was still opened after the movie! π
So that's it friends! Day 6! Chaufis!
