Ok so, Sleeping last night was such a task, even though I was SUPER tired. I was able to fall asleep for like an hour or so and then ... wide awake and I wasn't even raving or on anything πŸ€£πŸ˜‚πŸ˜‚ ... get it? 😝
Kept tossing and turning, super uncomfortable and kept thinking... ok well... pay attention, something might be coming through... I don't wanna fucking pay attention! LOL I wanna sleep! HAHAHA... I read a while back than when you wake up like that, there is a message coming, so pay attention... that was just my stubbornness because I was already in bed and COMPLETELY jelly D was so peaceful asleep! πŸ˜‚ Oh Lordy... so I fell asleep and then it happened again, then I finally fell asleep and it was the greatest, super peaceful. However, I did wake up super tired.
Meow, not sure if the not sleeping thing is the detoxing of carbs and sugar or what... so, I guess I'll keep observing... not I guess.. I'll observe πŸ˜‰
After writing my morning pages and meditating lazily (truly, rather than sitting down, I laid down listening to a Lakshmi mantra and chanting it within πŸ€— ... better than nothing), I made a breakfast shake:
Half of a small avocado, almond milk, Peanut Butter, vanilla extract, cinnamon, cocoa powder, a tsp of MCT oil, half of a tbsp of coconut oil! 😍😍 topped it with some cinnamon, cacao and little pieces of 99% dark chocolate, no sugar... YUUUUMSSS.

I thought about making the Matcha Latte again BUT when I eat or have so much of one thing, I get bored with it and stop liking it... and that will not be the case with my dear Matcha! πŸ€—πŸ˜‚ that being said, I did make some tea, Mint tea 😍😍😍 and of course put some coconut oil in it for πŸ˜‹ and a bit of Monkfruit Sweetener! ✌

SOOOO... 😝 ... after an amazing time at an Arboretum (added a new world in my English vocabulary lol English is my 3rd language and the hardest one for me to learn), hugging trees and playing like a child hehehe came back to make lunch!

The debate was among, pancakes with ice cream and chocolate syrupish thing, pizza OR tacos... we chose tacos πŸ€—

So here we are:

🌷Sautés red bell peppers and spinach with garlic, onions and cashews. Salt, pepper, cumin, paprika and garlic powder.
🌷Scrambled tofu with sunflower microgreens. Seasoned with garlic powder, coming, turmeric, cajun seasoning, paprika, salt, pepper and nutritional yeast.
🌷Sautés shroomies with nuts, garlic and onions. Salt pepper, cumin and paprika.
🌷Guacamole. I added garlic powder, paprika, mild Tabasco Sauce (it does have some corn starch, but it's one of the last ingredients and didn't use so much of it anyways, just needed a kick!) and nutritional yeast. Sprinkled paprika on top to make it more fancy LOL

SUPER DUPER FILLING! so much that SOMEONE (I'll give u a hint... not me lol) is taking a nap while I blog about it before I forget what I put in each dish lol

The thing is... I use my intuition A LOT when I cook, A LOT. I feel that's the key to make good food and good presentations. Weellll... I also went to Architecture school and what was presented had to be pretty much πŸ‘Œ... literally, otherwise we were told so and felt shitty about our work HAHAHA SOOO demanding that field πŸ˜‚ but its understandable.

Anyways, I did have a bit of that Ice cream I made, because I saw D eating his ice cream and wanted something delish as well... but it was only a couple of little spoons and just made some more Mint tea with coconut oil to help me digest all the deliciousness I ingested hehehe πŸ€—

I decided to make my own butter, because I can only find margarine here in Chiang Mai and this one brand of vegan butter that I'm not too keen of. PLUS, i looked up a recipe and it looked super simple and I had all the ingredients. πŸ˜πŸ™ŒπŸ™Œ I'm not really a huuuuge fan of butter, but this one is quite good... perhaps because I made it with love πŸ˜‰ he he AND I wanna make this cauliflower mash that D heard some guy makes it a lot, and of course it requires butter.

Plant Based Butter

Also... homemade Cashew Milk. I like using Nut Milk for my smoothies... that being said, I ALWAYS have homemade milk in the fridge and with the pulp make raw desserts 😜 hehe. The amazing thing is that the pancake recipe I used said it tastes WAY better with Cashew Milk! #Score πŸ€—βœŒ

So it comes dinner time and because I've been craving pancakes and had an emo moment (πŸ˜‚ really haha) decided to make some... ok... so it was SUPER tasty and SUPER filling... HOWEVER... they were super delicate and a pain in the butt to cook hahaha not sure if it was the pan, or because I didn't have baking powder and have to substitute it with yogurt and baking soda AND/OR since it's a Plant Based diet, I used chia seeds eggs instead of actual eggs... which has never given me a problem before... anyways it was delish and it satisfied my craving for pancakes AND they weren't even THAT big... see the pic! 😁

Here we go, pancakes with PB butter on the top layer, topped with the PB Chocolate Coconut Ice Cream I had made, nuts and a little PB on top, because I like making things pretty lol presentation, presentation, presentation. πŸ€— I also made an avocado shake that couldn't even finish πŸ˜‚. For that one, I used, a small avocado, homemade cashew milk, PB, cocoa, pumpkin spice, cinnamon, sunflower microgreens and vanilla extract. πŸ˜πŸ˜πŸ‘ŒπŸ‘ŒπŸ’–

Perhaps the "normal" version is "better" HAHHAHA. I'm TOTALLY satisfied with them. Soooo... here is the website for the recipe I used πŸ‘‡ (did not used chocolate chips that the recipe requires... maybe that's were the "problem" came from?! ... PLOP! πŸ€£πŸ˜‚πŸ˜‚)

I am super full, but not to the point that I cant walk, like when I normally stuff myself with pancakes hahaha and let's go back to... the pancakes I made weren't even THAT big.

Ok... pretty happy with the 3rd day progress and with the fact that I am entirely TOO happy with what I have been making that the emo thing stopped! HAHAHA it doesn't have anything to do with the fact that I cried my eyes out! LOL hahaha
