Morning, morning morning! 🤗 meow that I'm done with my morning routine, I can share about today's Ketowesomeness 😉 he he
Right after writing my morning pages, I made some Match Green Tea Latte. I first made the tea, adding 1 tsp of MTC oil, 1/2 tbsp of Coconut Oil and a small spoon full of crunchy PB! Because... why not! It totally gave me a surprise factor while having the tea! 😜 ... but before going to that, I added some coconut milk to make it a latte because I simply couldn't resist 😂🤣... somehow a latte makes me feel more fancy hahaha SOOO... surprise factor... given that is crunchy PB, it gave me something to chew on throughout having the tea and at the end which made it more interesting, PLUS... I LOOOOOOVE crunchy things hehehe
You can see the oil better in the non Coconut Milk version, which was still delish, but again... lattes, specially Matcha Lattes melt me 😌
I have a Mason jar full of chia pudding in the fridge, which I'm adding PB and nuts, topping it off with a mixture of Hemp seeds, Sunflower seeds, Pumpkin seeds and sprinkle some match powder on top 😘😋😋😍😍🤗 excited for it and the ice cream!
I worked out maybe an hour or so after the Tea Latte and after finishing up the Chia Pudding. I felt good and with tons of energy until... I got a bit light headed... but I mean... after SOOO MANY YEARS of eating TONS of carbs, perhaps that's normal lol I will see if that continues, since working out / practicing yoga is part of my daily routine.😌
It is lunch time! So, I had leftovers of dinner and used it making it a bit different than last night's meal. An entire thing of cauliflower makes 4 servings by the way 😄.
This time I roasted some cashews, sunflower seeds and pumpking seeds on coconut oil with pink Himalayan salt. After a bit, I added mushrooms, sunflower microgreens, cumin and smoked paprika, perhaps some garlic powder, cant remember lol ... I go with the flow of what seems and feels like would be a good choice for it 😉.
Once they were all set, added the cauliflower rice and the veggies with some Sesame Seed oil 😍😍 This time around I plated it with palta (avocado) around, topped it with microgreens and peppers! ANNNDDDD.... VOILÀ ! #MiamMiam 😋😋
And yes, the best part of a meal is the dessert so I had some of the Chocolate Matcha Coconut Ice Cream I made last night! BOOM ! 👊 #Peifection 😍 ( this for all of us Sharpei owners! 🤗😘 )
So... what has surprised me A LOT is that I am not craving snacks or feel hungry in between meals. I'm normally such a snackers! And carry snacks around with me ALWAYS, because being Plant Based, sometimes can be complicated 😂 and well meow with the Keto lifestyle... perhaps a little more! Anyways, it totally surprised me that I wasn't even hungry until I started making some food... and even before, while I was prepping things, I was thinking how I wasn't hungry but I knew I kinda needed something in my belly. Oh! And the other thing is that even though is the second day, I haven't craved sugars, fruits or carbs, even while grocery shopping this evening, they just seem like bleh! 😁🙌🙌 Perhaps because I'm thinking, what kinda magic can I create in the kitchen today?! Hehe 🤗
Ok so dinner time! 😋😋
I made some Zucchini Cauliflower Fritters. I used the recipe from thebigmansworld.com as a based and added more spices to it 😌. I added garlic powder, Italian herbs, nutritional yeast and a bit of MTC oil. Once they were cooked, I topped them with an avocado thingy (avocado, salt, pepper, garlic powder), sunflower microgreen, a cashew and some pepper on top... gotta make it look pretty... which made COMPLETELY happy! Lol have I mentioned, I'm such a foodie?!?! 🤗💖 Oh! So they are super delicate; I had to be careful when flipping them so they wouldn't fall apart, not so much, but just enough that I had to treat them so carefully lol Perhaps it's because I added the oil?! Regardless, they were quite delish! #MiamMiam 😍
I also made an almond yogurt sauce for them from the simpleveganblog.com. I kinda put more lemon juice than the recipe said, because I don't really measure things... HAHAHA... still worked out perfectly! 😉
Although I was completely full after eating three of this deliciousness, I had a couple of scoops of the chia pudding I made... needed something to change the taste in my mouth after taking B12, which I completely forgot to take it this morning... yes, the liquid form, not the pill form.
Anyways, day 2 was a TOTAL success! Let's see what day 3 brings us!
