PB Keto - Primer Día

Ok so... first day of Keto Diet... because why not. I've been wanting to cut down carbs for the LONGEST time, and well that was the excuse to try it out. Meow, that been said, I am not doing the regular kind since I am Plant Based... some say, it'll be harder... well the only hard thing I can think of is truly not being able to go out and eat, which is not a big deal anyway, I LOOOVE to cook... PLUS, I'll get another hobby than going to restaurants and eat delish food hahaha like going to Nature and hiking around the beautiful area of Chiang Mai 😍
Before I go into what I made for brunch... I do have to say, I had half a burger (couldn't finish it all Lol) and a tiramisu yesterday from Amrita Cafe, located in the old city mmmm YUUUUMMMSS!! Needed to get it out of my system. 😜
Ok, going back to the diet thing... or I guess my lifestyle for the next 40 days.

For breakfast I made scrambled tofu (seasoned with turmeric, salt and pepper) with sauté garlic, onions, shroomies, broccoli in coconut oil. I added some cumin, because its DELISH and ya salt and pepper.
I love playing pretty so I topped it with some Palta aka avocado, crushed cashews and sunflower microgreens with more pepper on top lol I guess I truly like pepper 🤣
OH ! How could I forget about Matcha Green Tea Latte!!! Homemade with almond milk! 😍😋😋👌👌 I have an obsession, which I like to call "Solution" with Matcha! Hehehe

So overall... (do I say So a lot?!? 🤪) pretty freaking delish! But I am also such a foodie so making good food is a MUST. It kept me pretty full until Derek started to talk about food and my hunger kicked in HAHAHA, but that's what snacks are for! 😜

Snacks, pretty much 2 hours after brunch since I woke up late lol wasn't really hungry until I saw Derek eating a spring roll and kept talking about food... 🤣 SOOO we went grocery shopping... again lol and got TONS of nuts mmmm 😍😋😋 had some of that pretty much after we just got done paying.

When we got back I made a smoothie... mmm gotta make a smoothie somehow, otherwise it will feel like life is not complete HAHAHA SOOO what can I make?!? Well, got microgreens (sunflower... I have a pretty funny memory about it that involves me biting pretty much the entire little box of it Mila had 😂), PB!!! (YUUUMSSS), 99% dark chocolate, almond milk, coconut flesh and cinnamon... I was thinking to put some avocado in it, but completely forgot about it, oh well... put them all in a blender and voilà ! DELISH!! 😍😍 do have to admit though... it made me SUPER full hahaha AND still not quite sure if coconut flesh is ok for the Keto standards, BUT I had it in the fridge and let's be honest... can't make food go to waste... let's rephrase it... can't make fruit go to waste... no fruit, just some berries and not too much... can we go back to...

I grew up in a fruit farm in Perú?! LOL


Honestly though, I know it's still the first day, but I don't miss fruit AT ALL. I even walked straight past the fruit and didn't even feel sad about it... HOWEVER... there's always a however no? Lol... walking past bread totally made me cry internally HAHAHAHA ooohhh carbs and gluten... what have you done to me?!?! 😂😂

So... enough talk... here is the pic of the shake with a pretty little notebook a got a few days ago 😜

Oh... one thing... I started taking more vitamins besides the B12 I normally take... just in case ... K vitamin

Chocolate PB Smoothie

I have to admit that I'm already liking this, for one main thing: having limited ingredients I can make food with, is helping me be more creative with my cooking and when it comes about creativity... mmm... Bring it!!! Hehe 🤪

Ok so ... I start too many paragraphs with these two words! 🙈 anyways, this shake above had me super duper full for like it seemed like foreveeeerrrr and meanwhile while I waited for everything to settled, I grabbed the copy I have of The Artist's Way and began to read it. I have to admit something... I TOTALLY understand why I bailed out of reading it in a group setting with Emily and other friends meow lol YUP! AMD why I am currently eating ... lol not sure where that came from... ah ok, that's not the subject, let's go back to talking about keto meals day 1 😜

Dinner time... let's say I was very happy to start prepping because I don't quite enjoy eating so late at night; it just makes me feel... uncomforts me... soooo... cauliflower fried rice it's what's on the menu. I'll tell you what I used, but the quantity and much spices 🤷‍♀️! I go with the taste 🤪
Started with making the base: garlic, onions, ginger, Chinese onion (in Spanish is cebollita china, I'm just translating it haha) on coconut oil. Once those were good to go, I added asparagus, broccoli and cabbage with some sesame seed oil (yuuuummsss 😋) salt, pepper, garlic powder, herbs and cumin. At what I felt was the right time, added the cauliflower rice that I had cooked separately and sautés mushrooms and basil. Mmmm 😍

Let's go back to when I said I like to plate it pretty he he placed some avocado on top, microgreens, nuts around and more pepper on top! 👌😋😋

I already started prepping some things for tomorrow: chocolate matcha chia seeds pudding and PB chocolate coconut ice cream (put some nuts inside 😉☺) 👇👇 ... excited to try it! 🤗😘💖🙏
