As always, after Meditation, D brought me a cup of delish Bulletproof coffee... I can SOO get used to this... wait a second... I am! Hehehe So, like every morning, I had it as I was journaling! ☺

Today's D's birthday so I decided to make him something special for breakfast... before we get into this... I am curious about how all of you felt during the first two weeks of Keto. I have to be completely honest and say that some times I am SOOO emotional πŸ˜‚πŸ˜‚πŸ˜‚ and again... I haven't been able to eat. The thought of food makes feel like men and even sometimes when I make something I think I would want, I try it and ya, no it doesn't work out for me so I leave it for later. Sometimes I go back to it, sometimes not... sigh... I have noticed though, that eating unsalted almonds does work from time to time... for most of the time. What seemed to be my favorite nut, cashews, I can't even touch. The thought of concrete food is not even appetizing and... I'm SUUUUCH a foodie! I've been mostly eating or I should say, having smoothies or smoothie bowls. Although at times, I still can't finish those... oh well ... let's get back to breakfast. πŸ€—

As I was saying, today is D's birthday, so I decided to make something special! ✌
I made him a breakfast pizza! πŸ™€πŸ˜πŸ˜
I used the crust from Santuri Keto, made an avocado sauce (avocado, pistachio milk, some chilis and a bit of the Thai Spicy Sauce from the same store. πŸ‘Œ), cooked some mushrooms and scrambled eggs.

Of course, some sunflower microgreens to add a little color to it and well... we all need greens in our lives! πŸ˜‰ some pepper on top and VoilΓ ! Oh! I also put some cheese on top of the crust in most of it, leave a small piece I could have ... 2 bites lol

I made myself a Coconut yogurt smoothie bowl. It just had a few ingredients such as homemade Coconut yogurt, cinnamon, cacao powder, sunflower seeds and coconut milk. At the bottom of it all, I placed a couple blueberries, just to be different today and not get boring with bowls. 😜

I sprinkled some cacao nibs, pumpkin seeds and cinnamon on top. I was only able to eat half of it before covered it and put it back on the frige to finish it later. I did however, eat some almonds while I was making breakfast. πŸ˜„

I went to a coffee shop near by to do some of the exercises of a workbook I'm doing: The Artist's Way and got some Rose tea with no sugar... I slacked today and didn't bring the MCT oil with me... although somehow, that doesn't even sound good at all either. 😞

During the mid afternoon, I was guided to eat something, so I finished the yogurt bowl I had made for breakfast with some, so I don't waste food. πŸ€—


I did some research about the best restaurants in Chiang Mai to take Mr. D for his birthday. I found this place in Nimman called Eat is Life (what a GREAT name!! 😍). It had amazing reviews and said the chef was super nice and very accommodating... and well... given the circumstances... some things DEFINITELY had to be accommodated! πŸ˜‚πŸ˜‚

The AMAZING thing about this place is that they have a salad bar!!! I was sold as soon as I read that! And well of course meat for the meat lovers and eaters; so I figured this place would be really good for dinner.

I didn't put any dressing on it, just some salt and pepper. I did read about seaweed that it has some carbs... if I'm recalling correctly, 100g has 10g of carbs. Gosh, it was SOO good, I had a bit more later! It totally took me back to my sushi days... I had TONS of those! πŸ€£πŸ˜‚πŸ˜‚

I ordered the roasted veggies! WOW! First... can we mention how pretty this plate is?! My favorite was the eggplant and the peppers! πŸ˜‹πŸ‘Œ the way they were cooked... holy moly! Ya... that's ALL I can say!

We also ordered stir fry mushrooms to share... YES!! Give me some shroomies!! Who would have thought there are so many kinds of them! The stringy kind was my fav! So crunchy and perf!! The asparagus... I don't think the birthday boy had any ... πŸ˜‚πŸ˜‚... they were THAT good!

I SOOO recommend this place! The chef was SUPER nice! Came to check on us a couple times and even when we left, he was busy so we couldn't say thank you, but he opened the door and thanked us for coming, and we were on the other side of the street! YUP! Super thumbs up! πŸ‘πŸ‘πŸ‘

When we got back to the house, we had some of the cheesecake I made... one little bowl! Mmm πŸ˜‹πŸ˜πŸ˜ I do have to admit that the change I made specifically in the crust makes a HUUUGE difference. The dates that are normally used for a raw crust make it SUPER sweet; the blueberries on the other hand, are subtle and eating the cheesecake doesn't make us feel like we need to lay down and chill before we go on with whatever we were doing beforehand. In other words : I ABSOLUTELY approve of the change! 😜

Alright my sweet friends, that is it for day 19!! It's been such an INCREDIBLE journey and we are almost half way there! ... we had decided to do it for 40 days, but I'm pretty sure we'll continue with it afterwards! πŸ€—
