PB Keto - Noveno Día

Buenos días a todos! 😊 Ayer empezamos la segunda semana de Keto!

Yesterday, we started the second week of Keto, which is exciting! 🤗

Today, I woke up alright... I had so many things in my mind, literally! Lol and as I was writing my morning pages, not eyes felt so heavy. I thought it was the light I had turned on in order to write, but as I continued writing, I realized I was tired, emotionally tired, which I guess it makes sense, since I had a little meltdown yesterday morning 😂... it kinda continued this morning, but not in that severe magnitude; I was actually able to talk about it in a very good way without freaking out.

It was funny, as I was writing, I was trying to figure out why I was tired... I got plenty of sleep, I thought... yet, it wasnt that kind of exhaustion... AH! ... the lightbulb went on... well that makes a little bit of sense; I did cry my eyes out yesterday morning ... 😂😂
Then I thought and was guided to make breakfast, (using my creativity in the kitchen is BEYOND healing and it always cheers me up AND my belly! 😜 lol) which I haven't done in a bit; I've been making shakes.

I stopped writing as the thought of a delish pancake came to mind... I still have some of the butter, I thought. I can put nuts on top, sprinkle it with seeds and make some kind of sauce... Mmm sounds delish... Meow, what kind of drink can I make? Matcha Latte?! Of course that sounds heavenly!

As I let the pancake cook, I looked in the fridge to see the ingredients I have... avocados! I gotta use this avocados! Perhaps I'll make an avocado shake... Ya! That sounds perf! ... I opted for that option. Matcha and avocado did not seem like a good combination at the moment, so I just made an Avocado shake, assing wheatgrass powder, Super Greens, 1/2 tbsp of Coconut Oil and almost 1/2 tbsp of MCT oil; put it on the blender and Voilà! Creamy and perfect ! 😍

While I waited for the pancake to be fully cooked (this time, I actually had patience waiting for it to be done 😏), I made a little sauce: Chocolate and PB! What a GREAT combo! ✌🤗 in the peanut butter jar, which there wasnt much left, I put some cocoa powder, vanilla extract and cinnamon. I mixed it up pretty well and YUP! to say it was delicious doesn't cut it! 😜

I placed some nuts kn top of the pancake: raw cashews and salted roasted almonds... I truly ADORE raw cashews! They are my FAAV!! 😍 ... also some sunflower seeds and hemp seeds. Put some of that super tasty sauce on top of it all and on the plate and sprinkled more hemp seeds on top. Result: Yummyness piece of art!! 😋😋

I showed it to D because I SUPER proud hehehe ... I actually wanted to make some kind of sauce, when I first made pancakes for dinner that night, but I was too impatient and I was hungry HAHAHAHA... and said "Oh! Cookie!" YUP! it was like having a really freaking good cookie! 😊🙌🙌😍🙏👊

I decided ... finally ... to make some Cauliflower Mashed Potatoes! 😍😍 been thinking about it since D mentioned it. Honestly, that is TOTALLY the reason why I made butter HAHAHAHA so today was the magical day! 🤗 I did use a recipe as guidance BUT then again, it's quite simple and I just used my intuition and my tastebuds to make it the way I thought was perf. The recipe said to steam the cauliflower... weelll I dont have a steamer and I thought the only other option was to use the microwave, which I dont like using for obvious reasons, little did I know, boiling it was the other option... if only I had read the entire recipe HAHAHA but, what's done it's done and it came out SUPER good and deliciously creamy! 😍😋👇

Cauliflower Mashed Potatoes

I placed it on top of some greens, spinach and lettuce, just to consume more of them and some avocado on top and around. 🤗 The ingredients are: one cauliflower head, some butter, some coconut milk, coconut oil, salt, pepper and nutritional yeast, blended to perfection! Simple! 😏

I made some stir fry veggies, nuts and seeds to accompany it. 👇

Honestly, I looked in the fridge and asked myself: "What would look good and taste good together?" And just grabbed them. The spices I used are: paprika, cumin, salt, pepper, garlic powder and of course coconut oil and sesame seed oil... mmm 😍😍 thinking about it makes me belly happy hehehe 😊

I also decided to use the burger "meat" and cook it on the stove to have a pretty filling lunch... not that it already wasn't, but why not! 😜👇

Lunch mmm YUUUUMSSS

We went to a coffee shop during the afternoon and since I am getting pretty freaking good at carrying thing around with me, I put some oil in my latte. Ok so... I have to admit one thing... although they did have soy milk, I'm not quite sure it didn't have any sugars and whatever beautiful design they made on top, was definitely sugary, but... Oh well! I truly wanted some latte! PLUS... it was such a TREMENDOUS work of art! 😍 check it out!

Dinner time came and with all the releases and the no hunger thing, I decided to just made a Turmeric Latte; which I did and didn't even drink it... lol I felt like such a child. So instead I opted for some scoop of PB and a drank a bit of Almond and Pistachio Milk... 🤣😂... ya... I child I can be and feel at times! 😜
