PB Keto - Día 21

Buenos días! How are you guys feeling this morning?! I am SUPER great! 🙂 Shall we begin? 😉

WOW! Ok! 21 days! I'm SUPER proud!! He he he

Ok, let's begin with coffee!! Come on! I feel like a morning without coffee is not a complete morning! Lol ... wow ... I never thought I'd say that to be honest... I wasn't a coffee person, but a tea one. However, I still do love me some tea! But mornings with coffee and journaling are just badass! Haha

That being said, here is the coffee! On my work, art, journaling table, next to Wasunthara, the Earth Goddess. This is a card D got for me, so I have it on my table as a reminder of how loving and thoughtful he is and also to remember I am a Goddess myself! 🤗

For a little breakfast, I made myself a smoothie bowl. I've notice that my body is being a little weird with solid foods... does that happen to any of you?... so, I'm going with what my body needs, which should ALWAYS be the priority anyway in my opinion. 🤗 Listen to your body, listen to your heart, listen to your being. ALWAYS 💕

Okis, going back to the bowl. I used simple ingredients... I have an AMAZING team behind the scenes that is always guiding on what it's best for me to eat, do, say, which is quite DOPE! 😍 SOO grateful! 🙏 ... I used a quarter of a ginormous avocado (because that's all we had left lol), a few blueberries, pistachio milk, hemp seeds, pumpking seeds, cinnamon, vanilla extract and Matcha powder. I blended all the ingredients together, placed them in a bowl and sprinkled some cinnamon, a bit more of hemp seeds, cacao nibs and a few almonds. 🤗 Ah! While I was making the smoothie and heating up D's breakfast, I did enjoy some unsalted Almonds; again... the guidance... I'm fully listening meow! 😜✌💕

We went to Sunturi Keto to pick up some MCT oil and decided to have lunch there. However, we were running a bit late and we had to take it to go... that being said, I kinda skipped lunch because I had a class... it is still kinda weird to me that hunger is pretty much non existent... 😞

The same thing happened for dinner. I knew I had to eat something but the thought of it was like meh. I did however, made myself a smoothie with avocado, coconut milk, celery, sunflower microgreens, sunflower seeds and a couple of blackberries. 😁

Also, I heated up the pizza that was supposed to be my lunch and shared it with D. 🙂

Normally, when my tastebuds are working properly I'm super duper excited for pizza; plus I KNOW how great this one, I've had it before. Tonight... I just wasn't feeling it.

PB Keto - Día 20

Hola friends!! We're half way through the race!!! 🙌🙌🙌 he he he

For those that don't know, D and I had decided to do the Ketoness for 40 days to see how it'd go. He had already done it a couple times, me on the other hand... got my cherry popped and I liked it! 😂🤣 still do lol we are still on the process.

Wow! 20 days... what an AMAZING experience!!! I thought I was gonna miss EVERYTHING I was used to eating, SPECIALLY fruits. Holy smokes, honestly it's quite impressing to me that I don't crave fruits AT ALL! 😱 I was SOOO used to making fruits smoothies (of course adding more things to them)... gosh, specially mango smoothies! Going out in Koh Phangan just to have some Coconut! Oh! And jackfruit! How can I forget about you baby?!?! Yet... I am TOTALLY ok without them! I do have a few berries once in a while, blueberries... they have such a carbs in them! Perf! 👌 Once in a while, I put them in a smoothie or yogurt bowl. 😍💕 They are almost like my treat! He he he

Alrighty! As always, the morning begins with Sadhana together and then morning pages and journaling while I sip on my delish Bulletproof coffee... one of the specialities of Mr. D! 🤗😍

Did you guys know that red lights are WAY better for your eyes than the bright ass lights that are normally in our homes?!? I learned that from D... if you'd like to know more about it, let me know and I'll have the explanation from him or ask Google! 😜

Ok! Breakfast time! 🤗 I'm not sure where I saw this, if it was in the Chiang Mai Keto FB page or somewhere else, but I've been having the idea of making an egg frittata. The one thing that had stopped me was the oven... we don't have an oven in our place but then today, the lightbulb went on and I thought "I can SOO make it on the stove." So I did! 😊

We didn't have lunch really... I guess breakfast was super filling! He he I did snacked on some unsalted almonds and while I was catching up on the blog and working on some sacred Geometry, D brought me some of his famous ice cream! YUUUUMMMSS!!!!

Oh Gosh! SOOO GOOOOD!!! Kinda sad we finished it all! 😭 But, that just means that he'll make some more hehehe

So for dinner we went to O.N. Thai Food and Steak. We wanted to try it a few days ago, but it was closed #SadPanda. Luckily for us this time it was open and it was YUMS! The lady is super sweet as well. The reviews were definitely on point!

Hola friends! Buenos buenos buenísimos días! 🤗😘💖💜🙏

As always, after Meditation, D brought me a cup of delish Bulletproof coffee... I can SOO get used to this... wait a second... I am! Hehehe So, like every morning, I had it as I was journaling! ☺

Mmm mmm mmm! Toasty! Hahaha that's part of a commercial from the States, that some of you might get, some might not! 😜

Today's D's birthday so I decided to make him something special for breakfast... before we get into this... I am curious about how all of you felt during the first two weeks of Keto. I have to be completely honest and say that some times I am SOOO emotional 😂😂😂 and again... I haven't been able to eat. The thought of food makes feel like men and even sometimes when I make something I think I would want, I try it and ya, no it doesn't work out for me so I leave it for later. Sometimes I go back to it, sometimes not... sigh... I have noticed though, that eating unsalted almonds does work from time to time... for most of the time. What seemed to be my favorite nut, cashews, I can't even touch. The thought of concrete food is not even appetizing and... I'm SUUUUCH a foodie! I've been mostly eating or I should say, having smoothies or smoothie bowls. Although at times, I still can't finish those... oh well ... let's get back to breakfast. 🤗

As I was saying, today is D's birthday, so I decided to make something special! ✌
I made him a breakfast pizza! 🙀😍😍
I used the crust from Santuri Keto, made an avocado sauce (avocado, pistachio milk, some chilis and a bit of the Thai Spicy Sauce from the same store. 👌), cooked some mushrooms and scrambled eggs.

Of course, some sunflower microgreens to add a little color to it and well... we all need greens in our lives! 😉 some pepper on top and Voilà! Oh! I also put some cheese on top of the crust in most of it, leave a small piece I could have ... 2 bites lol

I made myself a Coconut yogurt smoothie bowl. It just had a few ingredients such as homemade Coconut yogurt, cinnamon, cacao powder, sunflower seeds and coconut milk. At the bottom of it all, I placed a couple blueberries, just to be different today and not get boring with bowls. 😜

I sprinkled some cacao nibs, pumpkin seeds and cinnamon on top. I was only able to eat half of it before covered it and put it back on the frige to finish it later. I did however, eat some almonds while I was making breakfast. 😄

I went to a coffee shop near by to do some of the exercises of a workbook I'm doing: The Artist's Way and got some Rose tea with no sugar... I slacked today and didn't bring the MCT oil with me... although somehow, that doesn't even sound good at all either. 😞

During the mid afternoon, I was guided to eat something, so I finished the yogurt bowl I had made for breakfast with some, so I don't waste food. 🤗


I did some research about the best restaurants in Chiang Mai to take Mr. D for his birthday. I found this place in Nimman called Eat is Life (what a GREAT name!! 😍). It had amazing reviews and said the chef was super nice and very accommodating... and well... given the circumstances... some things DEFINITELY had to be accommodated! 😂😂

The AMAZING thing about this place is that they have a salad bar!!! I was sold as soon as I read that! And well of course meat for the meat lovers and eaters; so I figured this place would be really good for dinner.

I didn't put any dressing on it, just some salt and pepper. I did read about seaweed that it has some carbs... if I'm recalling correctly, 100g has 10g of carbs. Gosh, it was SOO good, I had a bit more later! It totally took me back to my sushi days... I had TONS of those! 🤣😂😂

I ordered the roasted veggies! WOW! First... can we mention how pretty this plate is?! My favorite was the eggplant and the peppers! 😋👌 the way they were cooked... holy moly! Ya... that's ALL I can say!

We also ordered stir fry mushrooms to share... YES!! Give me some shroomies!! Who would have thought there are so many kinds of them! The stringy kind was my fav! So crunchy and perf!! The asparagus... I don't think the birthday boy had any ... 😂😂... they were THAT good!

I SOOO recommend this place! The chef was SUPER nice! Came to check on us a couple times and even when we left, he was busy so we couldn't say thank you, but he opened the door and thanked us for coming, and we were on the other side of the street! YUP! Super thumbs up! 👍👍👍

When we got back to the house, we had some of the cheesecake I made... one little bowl! Mmm 😋😍😍 I do have to admit that the change I made specifically in the crust makes a HUUUGE difference. The dates that are normally used for a raw crust make it SUPER sweet; the blueberries on the other hand, are subtle and eating the cheesecake doesn't make us feel like we need to lay down and chill before we go on with whatever we were doing beforehand. In other words : I ABSOLUTELY approve of the change! 😜

Alright my sweet friends, that is it for day 19!! It's been such an INCREDIBLE journey and we are almost half way there! ... we had decided to do it for 40 days, but I'm pretty sure we'll continue with it afterwards! 🤗

I hope everyone is doing SOOO well!!

Let me tell you that I ADORE my mornings! Waking up being 5am is getting WAY easier and it's not such a struggle anymore... it was SUCH a task before!! Quite annoying and frustrating hahaha but meow is good and I have plenty time to do my morning practices before doing anything else I plan to do.

As always, the very first thing I have is D's famous bulletproof coffee while I write my morning pages as well as my journal! 😍💖 Today he made it even fancier adding not only cinnamon, but also cacao nibs!! Mmm!! I LOOOVE me some crunchy cacao nibs!!

Going back to not feeling hunger, feeling kinda nauseous and the thought of food is Meh! Regardless, I tried to have some breakfast while we were out running some errands... tried is the key word here.

We stopped at a restaurant, Manifreshto, in Nimman that we've been trying to go to for a bit meow. I ordered some tea, an omelette, mushrooms and some salad... mmm I probably had a few bites and had to stop... nope, not having this, said my body as it made me more nauseous... ahhh...

Around 3ish maybe or 4ish, I did get a bit hungry, but not for a meal, but for a smoothie bowl... mmm those are one of my faaaavvss besides smoothies. I made an avocado smoothie bowl! 😍😍👌 simple and few ingredients, avocados, pistachio milk, cinnamon, vanilla extract and Erythritol. On top, I placed some caco nibs, chia seeds, hemp seeds and almonds; sprinkled with some cinnamon for perfection! 😜 hehehe SOOOO good, but again, I couldn't finish it all! Let's see how long this continues lol

Ah! Since tomorrow is someone's birthday... I'll give u a hint! He makes me a badass coffee every morning! 🤗 I made some raw cheesecake that I had made when we were living in Koh Phangan, but this time... the Keto version of it... of course! Check it out!

However, for the crust instead of using a cup of dates, I used 1/4 of a cup of frozen blueberries (4g of sugar!) ... they were semi frozen, which made the crust making WAY easier.

The only thing I changed for the filling was the sugar. I diluted Erythritol in water rather than using whatever it asked for. 🤗

I did have to use more coconut milk otherwise, it wouldn't even mix and instead of walnuts, I used hazelnuts... YUUMS!!! Truly excited to try it tomorrow! 😄

PB Keto Día 17

This morning... and well last night... I felt SOO emotional... is my body still adjusting to the change of my eating habits? Perhaps or is it because I'm a woman?! 🤣😂😂 Perhaps... Could it be because I'm fully going back to my truth and living it? PROBABLY... as a matter of fact... I AM fully living it! 🤗 So thank you for the challenges, including the change of diet because EVERYTHING has shaped me and reminded me of who I AM... ok, just sharing this because it is important to know, the body goes through so many changes as we change what we eat that is felt in many layers of our being and if you are a super DUPER empath like me, you feel it ALL in a big BIG way.

Alright! ☺ Just like every morning since I expressed how DELISH D's coffee is, he's been bringing me a cup so I can sip on it while I write my morning pages. Let me tell you that sometimes it's hard to just take small sips because its SOOO GOOOOD!! Like today that he put some cinnamon on top and made it all fancy like! Hahaha

Honestly, I wasnt hungry AT ALL all day. I felt kinda nauseous, which makes me wonder if I the Keto flu is hitting again, or my body is adjusting to all the fat intake since it wasn't use to it. I was kinda scared of passing out while being outside that I decided to make something small and eat it. However, although I normally ADORE this, I wasnt feeling it, yet I still ate it. 👇

I made a smoothie bowl with a few blueberries, almond milk, pumpkin seeds, cinnamon and cacao powder. I put some hemp seeds, cacao nibs, some nuts and cinnamon on top. It's normally pretty fucking good, but like I said, I wasnt feeling it. 😞

For dinner, we went to the Old City to Dash... it's ok for normal Keto eaters, but for Plant Based, it could be tricky; yet... they TOTALLY worked it out for us. The chef and owner came to talk to us, about what can and can't be done and sweetly, made the changes for us. 😍😍😍 SOOO grateful!

Stir fry veggies and tofu! It was ok. I mixed it with some of the eggplant thing and it worked out perfectly! It added the kick it needed that the eggplant had. ANNND... I've been craving spicy food and soup! The chef made sure the soup didn't have any fish sauce or sugar, which made it more tangy and spicy! OH GOD THANK YOU!!! 😍😍😍

PB Keto - Día 16

Buenos buenos días amiguitos! Se acuerdan de la cena de ayer en la noche?! 😜 hehehe... ok ok... that was your Spanish lesson for the day hahaha .... do you remember last night's dinner?! Pancakes?! Weeellll, it was too filling to finish, so we decided to have it for breakfast today! 😍Mmm. Nothing can go wrong when having pancakes! ☺ but before this! I got spoiled AGAIN...he he he ... with some Bulletproof coffee D made me 💖 and as always it was 👌! And I enjoyed it as I was writing my morning pages; puurrrffect combination! 😍

Last night, D also made some ice cream and since pancakes can be a little dry, we decided to have some ice cream with them! YUUUUUMMMSSS!!! PLUS, it was my first time trying D's super special Ice cream! Since... eggs are part of the equation Haha

This time, instead of making a Chocolate Peanut Butter Sauce, I just made a PB one. Since the ice cream is chocolate anyways... too much chocolate sometimes makes my taste buds feel funky. 😝 Ok, here is the pic! Also had some leftover eggs whites from the ice cream that I cooked as well 👇

I added some microgreens because... we need to have some greens! Come on! Lol 🤣

A few hours after breakfast we decided to go to the gym (Yay!!! 🙌🙌🙌) and I was ordered to eat something small even though I wasnt hungry at all! 🙄 I guess it's a good think someone is also taking care of me! 🙏

The solution for that was a homemade coconut yogurt bowl with some seeds, nuts, cacao nibs, cinammon and a few berries. Tasty, I do have to admit.🙂

Lately, my tastebuds have been craving things I couldn't eat for the longest time... we already know about eggs, butter, this time is spicy food... which I stopped eating, probably two years ago? Maybe a bit more, given that my dosha is mostly Pitta, which means that I have too much fire in me... so it made sense, eating too much spicy food, would make me be like an explosive volcano... not fun for me and specially others 😂😂 perhaps this has changed as well?

I made tofu teriyaki stir fried with veggies. I sautée the tofu first so it'll be crispy, place it in a little bowl while I cooked the veggies and then mixed it all together again. I used the teriyaki sauce from Santuri Keto here in town with some of their Thai Spicy Sauce (spiiiccyyy!!! 💖) and also added fresh red peppers. 👇

I placed avocados around for our fat intake, as well as on top with some sunflower microgreens! I sprinkled some hemp seeds on top for some crunchiness and more deliciousness! Mmm 😍✌💖💖😋 VOILÀ !

PB Keto - Día 15

Buenos días amiguitos!! 😁

WOW! It's been over 2 weeks! AMAZIIING!!! Honestly, I thought it was gonna be harder than I expected. I like it A LOT!

One of my favorite things is not craving carbs or sugars. I'm 33 so pretty much the 33 years was FULL of them... can't complain... I LOOOOVED every bite! HAHAHA However, they did make me feel so full to the point that I couldn't move and so gross to be honest... yet... I kept eating them 🤣😂 No wonder why I had so many issues... lol .... that's another story... ok... breakfast time? ... weeelll beforehand ... someone made me some Bulletproof Coffee... I'm kinda becoming a fan... a BIG fan 😍

The good thing was that I didn't even have to come back to the kitchen, it was brought up to me to the room on the 3rd floor! Hehehe how spoiled Am I?! 😜😍😍 SOO grateful for this dude named D... well that's just the first letter of his name lol.

Anyways, back to Keto and food... Mmm 😋😋😋 ... first things first... we moved to a Townhome yesterday, which is SOOO dope and the kitchen area is nice! I can actually see what I have around without opening so many cabinets. The stove is a gas one... somehow those electric kinds... dunno... I guess I don't have much experience with them. The fridge is full of delish yuminess! AHHHHHH! Life is GREAT! SOOOO great! 💖#Grateful 🙏

Ok! Ready for breakfast?! It was SUCH a LEGIT one! 😍 Here we go!

I made scrambled eggs... yup... for you that are just catching up, I've been guided to go back to eating eggs after almost 3 years of not touching them at all; that and grass fed butter... shocking... perhaps... oh well ... 🤣... back to scrambled eggs... I used Pistachio Milk for it, butter, added some chia seeds, pumpkin seeds, sunflower seeds, Italian herbs, salt and pepper! End result = 👌👌👌👌!!! For 3 years of not having cooked eggs, I haven't lost my touch AT ALL! 😜

We have been talking about adding our fat percentage and making sure that we truly eat WAAY more avocados... not sure how I stopped eating since they are one of Claudia's staples! Lol ... that being said, avocados had been in my mind for breakfast (As a Peruvian I LOOOVE avocado and bread! Mmm 😍😍😋😋 It'sa combination we have ALL the time! 🤗) specially since yesterday that we went to the Keto Restaurant/Store here in Chiang Mai and got some Keto bread!!!!! Thank You God!!!! 🙌🙌🙌🙌

I placed the avocado in a lettuce/cabbage looking thing (😂😂) and some Sunflower Microgreens, so we can have more greens and well it is also a GREAT source of protein for Plant Based peeps! Salt, pepper and Nutritional Yeast on top of pretty much everything (not the bread). Final touch? MCT oil on top of it all! 😁 This time, I am ABSOLUTELY sure the meal is not lacking any fat! 🤗 #Yayness 🙌🙌

I couldn't heat up the milk, which was my first instinct because there was something funky that happened while I was making eggs... something like a tiny explosion... HAHAHA 😂😂🤣 ... ok it is funny meow, but at that moment I was like WOOOOWW!!! and finished cooking the eggs with my body in an angle not right in front of the stove, how I was when it happened! HAHAHA Oh Lordy...#Memories

After spending some quality time with sisters and going to an art store (!!!! 💖💖!!)... quick thing... I LOOOVE art!!! I felt like a kid in a candy store with wide eyes looking at EVERYTHING! luckily, I had some of a time restriction because D was picking me up! I truly mean it when I say that, otherwise, I could've stayed there for HOURS!!! ... Ok... we got back home and it was time to make some lunch. I wasnt truly hungry but I needed something.

Since I didn't finish the bread from breakfast, I decided to put some peanut butter on it and sprinkled it with Hemp seeds. Mmm ✌💖

I have been craving some soup, specially Coconut Soup. I had ALL the ingredients for it, so I decided to make it. I had a curry thingy that we bought from an Organic store (no sugar! 🙌🙌) and used it as a base. Added cauliflower, mushrooms, tofu, celery, Coconut Milk and 2 eggs when it was nearly ready... in my opinion... then looked at it and thought "Its too runny, let's make it a bit thicker." I looked around to see what I had in kitchen; I grabbed the Coconut Cream and the Psyllium Husk... I added a little bit of the first one and accidentally WAY TOO MUCH of the later one... complete mess!! HAHAHA 🤣🤷‍♀️ Obviously, there is no pic of that one. I had to throw it away... but first I tried to fix it... ya that didn't work out very well AT ALL! 😭😭 so ya... Try number two because I really, REALLY wanted some Coconut soup and the first one was SUPER tasty, I just fucked it up! Lol

I pretty much used the same ingredients, but I had to create my own base. I placed some bok choy at bottom and sunflower microgreens on top. Added some pepper and voilà ! 😄 ... I made the tea first, put it in the blender for with Pistachio Milk, Cinnamon, MCT oil, Coconut Oil, some Erythritol and cacao nibs. It all was blended to perfection and I have to say that... it's probably one of the best Lattes I've had! 😍 and I'm adding the probably just to be modest. 😜

When it was time for dinner, I was thinking about pancakes... Mmm! The AMAZING thing about Keto is that you can still eat whatever you liked before! Just need to adjust a bit! No biggie AT ALL! 🙂 This time around, eggs were part of the mixture which made the pancakes quite fluffy! 😋😋

PB Keto - Día 14

Hi friends! Two weeks! WOW! two weeks and it's been GREAT!

The first week was a little challenging for the fact that we both got the Keto flu... felt out of energy, like I was getting a cold then not really, my body didn't want to do ANYTHING some days, which kinda freaked me out not gonna lie... I'm SOOO used to being SUPER active: working out and practicing yoga every day... that didn't happened. However, it got better and better and I was able to do more physical activities but how I am used to. Slowly I added workouts and yoga... I didn't want to pass out of kill my body to be completely honest... I've done that before and it's not fun AT ALL. Plus, we were staying in a condo, but still needed to find a place where to stay longer and not worry about moving all our shit again... that sounds like we have TONS of stuff HAHAHAHA 😝

Ok, shall we start? ... like I haven't... 🤣 ... ok... concentrate... Bulletproof Coffee ... I have to admit that is quite delish! And the butter gives it the Latte texture, which I ADORE! 😍😍 Plus, the fact that I don't have to make and it gets done for me too ... someone gets DOUPLE brownie points! 😉

In between packing and moving, yesterday was a bit hectic, but we made it work 🤗 I did have a few nuts while we were packing; I needed something in my belly. All the stress and the moving around made me a tad hungry 😮

For breakfast... more like brunch really ... we went to the Keto Restaurant/Store to pick up some things and of course... to eat! 😋
The fact that I haven't had an oven to make the cauliflower pizza dough thingy, had me thinking and thinking and overthinking about having pizza AAANNNNDDD of course they have some on their menu! 😍😍

A side note before I continue to share... if you live in Chiang Mai or visiting, I TOTALLY recommend stopping by Sunturi Keto. They are ABSOLUTELY amazing! They totally made a special pizza for me without any cheese or meats! And because there is a Keto meeting this weekend there, the sweet lady asked me what I wanted to eat, that she will make me WHATEVER I am craving!! 😍😍😍 like... talk about getting spoiled! 💖💖 getting coffee made for me and anything I desire in a restaurant! SOOO grateful! 🙏💖

After going shopping for some things for the new house and groceries, we went to a restaurant near by, because I was too lazy too cook... specially after having done so much today... or felt like. 😜

I was SOO hungry that ordered a salad and some veggie rolls to share... Let me tell you that my jaw dropped as soon as I saw not only the salad but its size! 😱 👇

I didn't wanna waste it... ok... I'm going to rephrase this... I didn't want to waste as much and eat what I could. I took the rice paper off... I KNOW!! So wasteful, but honestly, I do LOOVE not having carbs and I'm trying to do this Keto thing as well as possible!... doing not trying... and the ham...and the carrots... hahaha wtf... so I had lettuce and eggs... Jesus... next time... stay AWAY from veggie wraps even if you feel you can eat the entire Globe! 😂😂

Last thing, like I mentioned before, D was being such a child (I do love when he acts like that! 😜) and wanted some cheesecake with blueberries and Pistachio Milk, so I served him some and had a bite! Mmm the perfect bite before ending the night! 💖

Hola kids! Let me start with say that today, I... We TOTALLY slacked on the fat intake... 😱🙈😪 ... I'd like to blame it on the no hunger thing and finding a place to live, BUT that's no excuse... and wel... we are out of MTC oil!!! WAAHHHHH 😭😭😂😂

Ok... after my morning practices, I decided to make a smoothie bowl. D showed me a Keto one and... I LOOOOOVE smoothie bowls!!! So that had been in my mind lately. Although it looked SOOO pretty, I didn't eat it 😭 After I was done making it, somehow I wasnt even hungry! So I decided to eat it later or tomorrow morning... ahhhhyyy Dios Mío! I made an avocado smoothie with spinach, a bit of wheatgrass, probably 8 blueberries from Perú! YUP! I found some! 😍😍💖💖 topped it with cacao nibs, chia seeds, hemp seeds and a mixture of peanuts, cashews and pecans. I sprinkled some cinnamon on top of the nuts because... why not! 😜

Ok, D made his bulletproof coffee and let me try it... are you ready for my answer?!?! Here it is: DELIIIICCIIIIOOOUUUSSS!!!! 😋😋 he should be making the one at that one restaurant! HAHAHAHA Honestly though... that one... I felt I was just drinking butter and I was never really a butter fan until... until this coffee happened! 😂

SOOO filling, I couldn't finish it all! But SUPER yums!! 😋😋

PB Keto - Día 12

I went to bed SUPER late last night... in comparison to my normal sleepy time. I had to catch up with things otherwise, they were gonna pile up and that's never fun... something were already piling up... made me anxious and uncomfy. SOOOO... I thought that just how I used to do in the past, I could still wake up at 4ish, do my morning practices and go back to bed to take a nap... weeellll that did not go like I expected. The alarm clock went off, I was way too exhausted to get up and my guides... my ADORABLE guides just told me to rest, I needed it... don't gotta tell me twice to go back to bed and rest 😂. Being that I'm such an obedient girl ... he he he... I listened and went back to bed.😝
Finally, woke up WAY later than I normally did... reward for that?! Got taken to the park at the old city! 🙌🙌🙌 Perhaps I should wake up later every day... 🤣😂😂 just kidding. Prior to going to the park, we stopped by a coffee shop and got some tea/coffee 😍👇👇

Alright breakfast... let's start with one tiny thing... perhaps not that tiny... oh Lordy... ok... here we go... for almost a week... let's actually start with, I have a super strong connection with my Angels and Guides. We talk daily, multiple times a day. They guide constantly and I know for sure they ALWAYS have my back... ok, back to the point... for almost a week, they have been telling me to go back to eating eggs and grass fed butter (I have been strictly Plant Based for almost three years), but because that did not sound good to me I was like nah... just gonna ignore you, which of course, that never, NEVER works out 😂😂. The reason is simple, the messages get stronger and stronger the more they get ignored; what you resist persists. It didn't matter that they were telling me the reason why; like I said, they always have my back and I know that, I'VE KNOWN that. The thought just kinda freaked me out, I'm not gonna lie. Today, however, I finally listened and had some eggs for breakfast 🙀🙈🙈... I know, I know. I couldn't deal with seeing the yolk, so the choice was in between scrambled or an omelette. I opted for scrambled.

There was an overwhelming turmoil within me that was happening as I was waiting for the food. Part of me was like "WTF Am I doing?," and the other part kept saying "It's alright, you'll be alright. Trust." Ok... trust... meanwhile my guides were saying "Don't worry. It's all happening for a reason. You clearly know it." And I did. When the plate came, I was a bit terrified, yet excited, because when we got on the bike prior to go to the restaurant, my mind kept saying "Eggs, eggs, eggs." I sprinkled some salt, pepper and a bit of the oil. The first bite came... Holy shit, this is as good as I remembered! How is this possible?!? ... I used to LOOOOVE scrambled eggs... I guess I should rephrase this... I LOOOVE scrambled eggs... I had forgotten how filling they can be and even though I was full, I knew I had to finish them; again... guidance. The last bite were the BEST! Salty and peppery; just how I liked them.

Throughout the entire meal, I was completely shocked. I stopped eating eggs because their smell made me gag and they made me nauseous... not anymore. Enough talk about the thought and feeling battle in my head 🤣 let's see the pic! 👇👇

Alright! Let's go back to the guidance about grass feed butter... ayayay!... D got some bullet proof coffee and I did have a couple sips of it. Honestly, I didn't like it very much. It was way too buttery for me, but at the same time, it was such a small amount, so perhaps that's why the buttery taste was prevalent. However, I'm excited to try the one he makes at home. 🤗

I did however, had some of the PB Coconut Yogurt Drink with Cacao nibs I made last night, after a MASSIVE healing I channeled. Doesn't that sound magnificent?!?! 😁 I did to me anyway! One thing that is crazy to me... how in the world, most coffee shops dont even have Coconut milk when I'm in Thailand?!?! Serious question! 🙄

Given that we were already out and about we decided to stay out and have dinner. I ordered a grilled tofu salad. I asked the sweet waiter what the salad had, he said lettuce, mushrooms and tofu. He forgot to mention, however, that it also came with oats and raisins... PLOP! 😪 So when I got the salad, I had to take them out, as much as I could and it was kinda annoying... truly annoying actually. He came to me and said "Oh, you don't like granola?" My answer was "Mmm, I'm kinda allergic to them." I didn't want to go the same route as at the Indian Restaurant and seem so fucking complicated. He offered to have it remade a couple times, but let's be honest, I wasn't gonna die from it so even though I appreciated the offer, I declined it. Here it is without me taking all the stuff out. I do LOOOVE waking up when the sun is not up and do Sadhana in completely darkness! It's SOOOO peaceful, SO magical, it helps me tune in and connect deeper with myself.

After I was done with it, I decided to make a Matcha Latte, D style, with butter (homemade vegan butter! 😜)... he's been doing the Bulletproof coffee thing for a while meow and he recommended I put some butter in my latte. "Wait till you try it" were some of his words... although, he was definitely talking about grass fed butter ... been thinking about a transition to add that butter to my diet as well as free range eggs ... 🙀 I know, I know, can't really say anything about it until I try it. I feel like I'm SLOWLY adjusting my mind to that transition 😂😂...

Anyways, Matcha Latte! YUUMS!! And it was completely delish with the butter, coconut oil, MTC oil, some Psyllium Husk, a bit of Erythritol and Almond milk! I'm gonna say it again... YUMS YUMS YUUUUMMSSS! 👇👇

Ok so... I went to the Organic Market at One in Nimman... specifically because I wanted to get cacao nibs and make a smoothie bowl with it... which I haven't done yet 🙈😂... of course I ended up buying more things, such as tofu, veggies, herbal tea with no sugar of course! and wheatgrass. Ok... here is the thing: I do LOOOVE me some wheatgrass shot. However, I had NO idea one ounce of it is equal to 16 grams of carbs!! 🙀 PLOP!!

The vegan cheese lady (Thank God!!!), also a vegan keto lady, had her stand right in front of the wheatgrass one and called me after I had the shot to show me the calculator... like... there's a calculator?!?! Of course there is! 🤣 live and learn... meow I know. 😝

I wanted something refreshing for lunch, so I opted for a salad, but... being who I am, I had to make something else too with the leftovers I had in the fridge, so it wouldn't go bad.✌ Mixed veggies with nuts, seeds, avocados, olive oil, salt and pepper! 😋😍😍
I also made sautés mushrooms mixed with some vegan meat and the steam of the cauliflower that I had from making the Cauliflower Mashed Potatoes. I just put some sesame seed oil, salt and pepper. Served on Chinese cabbage? Some lettuce looking thing. Lol VOILÀ! Lunch was perf! 😊

There truly wasn't much of a dinner. I had made a bag of trail mix with different kinds of nuts, seeds, cacao nibs and 99% Dark Chocolate... ate some of that with some sisters I met 🤗 (went to a sister circle! 🙌💖) and by the time I got back home, I truly wasnt hungry. HOWEVER, my mind kicked in and thought that perhaps I DID need something else, SOOO I made a shake thingy with Homemade Coconut Yogurt, cacao nibs (I'm on a kick!), Peanut Butter and vanilla extract. Yup! It was as good as it sounds, yet I didn't finish it... I might have a thing for making drinks at night and not finishing them. 😮

PB Keto - Décimo Día

I realized last night, how important it is to keep a solid routine. I had been meaning to go back to my 5am wake up time for the LOOOOONGEST time, yet I kept finding an excuse for it... whether it was that I was too tired, or releasing so much, etc etc etc. I promised myself last night that I was starting that today, because I need to for my sanity hahaha and to go back to the practices that work best for myself: Kundalini Yoga.

I know the change in my eating habits are triggering some things, PLUS other practices are surfacing other emotions and hidden things I had no idea they were there, yet... that's not an excuse not to do what keeps me grounded and sane, right? ☺ That being said, I actually set up my alarm clock at 5 and woke up at that time WITHOUT making complaining noises! 😂🤗✌🙌 did my morning routine, starting with my meditation practice, which is Sadhana... AHHH Kundalini Yoga! How much have I missed your face!! 😍😍💜💜💜🙏 I guess if you don't stop practicing something that's good for you, you would never know how much it serves you, no?

After having one of the most amazing Savasanas in a while, I decided to make a shake. 🤗 Remember the Latte I made last night and didn't drink it? Hahaha Weeellll, I used it and mixed more things to it, to make it tastier... I had definitely put WAAAY too much Turmeric in it. As I came to the realization, my guides said "Well, you did want a Turmeric Latte"... smart asses! 🤣

Ok so... I added almost 1/4 of an avocado, some cashews, a bit of coconut milk (truly a bit, there was no much left in the carton), a scoop of Amazing Greens and a Scoop of Wheatgrass... YUUUUMSSS!!!! 😍😍😋😋👌 I absolutely LOOOOVE how creamy the smoothie turns out when adding avocado to the mix! #Peifection

Ok, here comes the thing... I dont speak Thai... unfortunately... and I can't expect people to reply to me in English right? So first, I ordered a Matcha Latte (hahaha I know!), but then saw their menu and it said only Milk and Non Fat Milk. As I noticed that, I changed my ordered and said "Green Tea," thinking that by doing such, I took the Milk out of the equation. When the cute thai lady comes with my drink, I noticed that it DEFINITELY had milk in it... well shiiiit... I started at it for a bit, I commented on it, D offered for me to have his coffee and him the tea, and I said no... I mean... it's an Organic Café, so I kinda do trust that the milk is coming from a better and more humane source than other places... no?... part of me was like ahhhhh, the other part was like, "Truly is not a big deal, you probably did have some fish sauce in some thai dishes when you didn't know it was used SOOO much in Thai cooking." SOOO... I had the Latte. 🙀🙈🤷‍♀️

Ya, I didn't say no sugar, since I thought it was gonna be a simple tea and it definitely had some... live and learn... it tasted like it had tons of it... ok maybe I'm exaggerating a tad, BUT being that today is day 10 of PB Keto and I haven't had sugar in 10 days, it tasted like it had A LOT of it. Anyways, I still enjoyed it and the ambience of the café! 😊

Yesterday, we started the second week of Keto, which is exciting! 🤗

Today, I woke up alright... I had so many things in my mind, literally! Lol and as I was writing my morning pages, not eyes felt so heavy. I thought it was the light I had turned on in order to write, but as I continued writing, I realized I was tired, emotionally tired, which I guess it makes sense, since I had a little meltdown yesterday morning 😂... it kinda continued this morning, but not in that severe magnitude; I was actually able to talk about it in a very good way without freaking out.

It was funny, as I was writing, I was trying to figure out why I was tired... I got plenty of sleep, I thought... yet, it wasnt that kind of exhaustion... AH! ... the lightbulb went on... well that makes a little bit of sense; I did cry my eyes out yesterday morning ... 😂😂
Then I thought and was guided to make breakfast, (using my creativity in the kitchen is BEYOND healing and it always cheers me up AND my belly! 😜 lol) which I haven't done in a bit; I've been making shakes.

I stopped writing as the thought of a delish pancake came to mind... I still have some of the butter, I thought. I can put nuts on top, sprinkle it with seeds and make some kind of sauce... Mmm sounds delish... Meow, what kind of drink can I make? Matcha Latte?! Of course that sounds heavenly!

As I let the pancake cook, I looked in the fridge to see the ingredients I have... avocados! I gotta use this avocados! Perhaps I'll make an avocado shake... Ya! That sounds perf! ... I opted for that option. Matcha and avocado did not seem like a good combination at the moment, so I just made an Avocado shake, assing wheatgrass powder, Super Greens, 1/2 tbsp of Coconut Oil and almost 1/2 tbsp of MCT oil; put it on the blender and Voilà! Creamy and perfect ! 😍

While I waited for the pancake to be fully cooked (this time, I actually had patience waiting for it to be done 😏), I made a little sauce: Chocolate and PB! What a GREAT combo! ✌🤗 in the peanut butter jar, which there wasnt much left, I put some cocoa powder, vanilla extract and cinnamon. I mixed it up pretty well and YUP! to say it was delicious doesn't cut it! 😜

I placed some nuts kn top of the pancake: raw cashews and salted roasted almonds... I truly ADORE raw cashews! They are my FAAV!! 😍 ... also some sunflower seeds and hemp seeds. Put some of that super tasty sauce on top of it all and on the plate and sprinkled more hemp seeds on top. Result: Yummyness piece of art!! 😋😋

I showed it to D because I SUPER proud hehehe ... I actually wanted to make some kind of sauce, when I first made pancakes for dinner that night, but I was too impatient and I was hungry HAHAHAHA... and said "Oh! Cookie!" YUP! it was like having a really freaking good cookie! 😊🙌🙌😍🙏👊

I decided ... finally ... to make some Cauliflower Mashed Potatoes! 😍😍 been thinking about it since D mentioned it. Honestly, that is TOTALLY the reason why I made butter HAHAHAHA so today was the magical day! 🤗 I did use a recipe as guidance BUT then again, it's quite simple and I just used my intuition and my tastebuds to make it the way I thought was perf. The recipe said to steam the cauliflower... weelll I dont have a steamer and I thought the only other option was to use the microwave, which I dont like using for obvious reasons, little did I know, boiling it was the other option... if only I had read the entire recipe HAHAHA but, what's done it's done and it came out SUPER good and deliciously creamy! 😍😋👇

I placed it on top of some greens, spinach and lettuce, just to consume more of them and some avocado on top and around. 🤗 The ingredients are: one cauliflower head, some butter, some coconut milk, coconut oil, salt, pepper and nutritional yeast, blended to perfection! Simple! 😏

Honestly, I looked in the fridge and asked myself: "What would look good and taste good together?" And just grabbed them. The spices I used are: paprika, cumin, salt, pepper, garlic powder and of course coconut oil and sesame seed oil... mmm 😍😍 thinking about it makes me belly happy hehehe 😊

I also decided to use the burger "meat" and cook it on the stove to have a pretty filling lunch... not that it already wasn't, but why not! 😜👇

We went to a coffee shop during the afternoon and since I am getting pretty freaking good at carrying thing around with me, I put some oil in my latte. Ok so... I have to admit one thing... although they did have soy milk, I'm not quite sure it didn't have any sugars and whatever beautiful design they made on top, was definitely sugary, but... Oh well! I truly wanted some latte! PLUS... it was such a TREMENDOUS work of art! 😍 check it out!

Although I had a good night of sleep, I had a very interesting morning with my emotions. I actually woke up feeling SOOO good, then... as I was writing my morning pages, things changed and a rollercoaster of emotions overwhelmed me. I'd like to say is about the change in my eating habits, but then again... I'm doing other things that would trigger such emotions, SOOOO can't blame it on just Keto lol However, I do believe that it IS a combination of everything and of course its partially because if it.
That being said, I feel way calmer to talk about breakfast... although I can't lie and I do feel so fragile and my heart open in such a way I haven't felt before ... in this lifetime.

So, I truly wasnt quite hungry, but I knew I had to eat something. Sometimes, when we release a lot, hunger can hide for a bit OR it can strike super duper hard; both have been the case for me. This time around, like I said, I wasnt hungry, but I knew I had to eat... crying takes A LOT of energy... plus, I finished dinner at 6.30pm yesterday and it was around 10is am. SOOOOOO.... I had been feeling and perhaps craving a chocolate peanut butter shake, which I made 🤗. I blended those ingredients with some sunflower microgreens (hehe I truly like these ones), I had a bit of celery on the same plate as them, so I though "fuck it! Why not!" 😉 (if you don't like celery, then that's definitely not a good idea for ya! Lol celery does have a strong taste, so even though I didn't use much of it, its taste was still a bit strong. BUT, I LOOVE celery, so I was totally fine with it 🙂) and put them in the little blender. 😏 I added, cinnamon, Pure Vanilla extract, Milk, 1/2 tbsp of coconut oil and almost 1/2 tbsp of MTC oil... quite delish! 😋
I also made a coconut yogurt bowl, using the yogurt I had just made (😍😍😍!!!), probably half of it, some peanut butter (who doesn't like PB?!?!), placed a combination of seeds and nuts on the top and sprinkled it with Hemp Seeds... ok... if you been wanting to make your own yogurt, I SOOOOOO recommend the recipe I used from the Minimalist Baker! Only 2 ingredients (Full Fat Coconut Milk + Probiotics = 👌👌😍😍😋😋), you just gotta be patient and wait the time it takes for your perfect yogurt!

I had such a FILLING breakfast, WAY later than normal, so lunch time came around and of course the hunger wasn't there. HOWEVER, one can NEVER say no to Matcha 😂🤣... soooo... I ordered a Matcha Latte Frapped with Almond Milk with no sugar AND... I learned from the past (😉🙌) and keep a bag of nuts and seeds with moi, as well as the little bottle of Brain Octane Oil 😊 which is what I used for my Frappe! Super duper refreshing! 🤗 and well... delish! 😜

Alright dinner time! 😋 ... just a question first ... for you sweet souls that have tried Keto before, do you even get hungry? D and I were talking about, actually have been talking about it, that perhaps it's a different kind of hunger, a more subtle kind, because to be completely honest, I haven't been hungry OR starving, which was SUPER common for me, before trying out Keto. 😱 I'd like to hear from some of you, to make sure it's not just me hahaha

Anyways, back to dinner. As we drove around, we saw this Indian Restaurant that had a sign with "vegan" on their sign outside of the premises... SOOOO... of course that was on my mind and we went there for dinner. Meow, here comes the difficult part of going to an Indian place as PB Keto: most Vegan dishes have lentils... NOPE, potatoes... NOPE, cheakpeas ... NOPE, carrots... NOPE... PLOP! 😂 I felt so EXTREMELY complicated and SUPER bad for the waiter, because things had to be modified for us... ok in particular for me, since I'm the vegan HAHAHAHA, BUT we made it happen. We opted for a dish that came with potatoes and cauliflower, but potatoes were taken out of the equation and it became a SOLID cauliflower dish and the other one just had okra. 😊

Lucky for us, peanuts were brought up to the table as we waited for dinner. 😏👇

The one thing I told the sweet and patient waiter was that we were on a diet... lol and the face as I was telling him "No, can't have that either," was just... sad HAHAHAHA I truly felt bad for making an order so complicated. I guess next time, I'll say I have allergies that way I am not seen as annoying? 😂 that was D's idea, which it TOTALLY makes more sense no?

PB Keto - Séptimo Día

We made it through a week! 😉 and it's Halloween!!! Happy Halloween everyone!!! 💖💖😘

Anyways... it was SUCH a COMPLETE STRUGGLE to wake up this morning!!! Like SUUUUUUCHHH A STRUGGGLLLEEE!!! 😥

I tried SOO many times to get out of bed, my mind was in it, yet my body was like "Nah uh! No effing way!!" 😱😫 I probably tried 4 or 5 times and I just made what seemed like complaining noises... the ones I'm making when I'm feeling sickish... but my body still wouldn't move... ok, so bed for a bit more it is!... this bit more was 3 hours! 😦 Jesus! Hahaha and even when I got up I was feeling kinda out of it.

I'm not quite sure if it's because I went to bed later last night (went to see Bohemian Rhapsody!! The Mr. Robot killed it!!!! 😍😍😍 I was in such an Awe at his performance!!), the cutting of Carbs and Sugar, what the Artist's Way brings forth, OR again the combination of EVERYTHING! lol but again... 33 years of eating all the delish carbs I wanted... and then stopping... that's a BIG change... my body is probably like "What in the world?!?" ALTHOUGH! I do have to say that I see the difference in my physical body, which is AWESOME for just being in week 1!

I made a smoothie this morning again, somehow this chewing thing is not cutting it for me 😂. This deliciousness is a combination of Almond Milk, Cashew Milk pulp, a scoop of Amazing Greens, a handful of sunflower microgreens, pure vanilla extract, cinnamon, 3 pieces of 99% dark chocolate, 1/2 tbsp of Coconut Oil, 1/3 tbsp of MCT oil and a generous scoop of Peanut Butter (had to make sure I was placing enough fats, because yesterday, I'm pretty sure I didn't have enough of them 😕). I blended it all, but made sure I left some crunchiness lol and topped it with cinnamon and little pieces of the chocolate. When I was almost done with it, I saw that at the bottom, there was still some chocolate, so I added Pistachio milk and finish it all with a spoon. 😍😍😋😋😋 #Yummyness

For dinner, we went to this Thai restaurant down the street. I ordered Mushroom Tom Kha soup... I asked with no fish sauce and no sugar. I also ordered this mushroom thing, but I guess they thought I order Papaya salad... lol didn't even realized that until I had already put some nuts, seeds and MTC oil on it... 😂😂, so I had to just eat those things and the soup, which I also put them as well.

Buenos días! 🤗 I hope everyone that an AMAZING sleep or day... whatever you are in the world! Yo dormí SÚPER bien! I had a GREAT night sleep! 😃 I'm gonna go with... Yin Yoga, Zinc and Magnesium are such a DOOOOPE combination and aids with the sleep thingy! ALSO, the diffuser was honest night with Lavander and Tangerine... pretty sure that helped too! 😍 So, I don't feel restless at all! The only different thing is that I just had a concert with my sneezes lol but, I'm pretty sure that is not Keto related lol that's just a Claudia thing! 😉🤣😂

So, since I am getting used to my new schedule, that used to be my schedule since taking my first Kundalini Yoga Training in Vegas (waking up at 5ish to do my morning routines 😏), I decided to truly make an effort to have my meals at the same time everyday, since my schedule has been ALL OVER the place... which means, a smoothie around, 7 or 7.30, lunch around 12.30ish PM and dinner at 6.30pm. This way I will be able to have the 12 hour fasting everyday without any problemas. 🙂

That being said, I made a smoothie this morning that kept lingering in my mind last night and before going to bed... so I wouldn't forget it: Avocado Turmeric Ginger Smoothie! 😍😍 to be completely honest, sometimes I COMPLETELY forget about turmeric. I have been placing it in smoothies for a bit meow, but cooking with it... I must experiment. 😆 So here it is! 💜👇👇

Ok... perhaps not so much as a smoothie, but a smoothie parfaitish? Super creamy and tasty ... if you like ginger and turmeric that is. So ingredients: half of an avocado (I made a point we gotta eat more avocados so they don't go bad, PLUS, they are super yummy and have tons of good fats! 😏), homemade cashew milk, some coconut milk (totally ran out of the cashew one), ginger, turmeric, pepper, hemp seeds, sunflower seeds, a scoop of Super Greens, a hand full of sunflower microgreens, 1/2 tbsp of coconut oil and a little more of 1/4 tbsp of MCT oil (got the spelling right this time around! 😜🙌🙏✌). Topped it with sunflower seeds, hemp seeds, almonds and sprinkled it with more turmeric and pepper! VOILÀ !😍 It's such a simple way of making a lazy breakfast hahaha OR if you are like me, it's the BEST way of making breakfast! Not time consuming AT ALL, no mess at all, satisfying and still feels like you are eating something since you get to use a spoon and chew, rather than just drink. Lol... I cant be the only one who thinks about these things! 😂😂
AANND since we already came to the conclusions that I am such a baby.. lol... I am making some fresh ginger tea (perhaps this will help with my sneezing orchestra/symphony and make my nose feel much better 😜) with 1/4 tbsp of Coconut Oil, so I can sip it while I write on my journal, or have it after Meditation 🤗💖✌

Lunch time... I did have a handful of Cashews after working out... the workout made me a bit hungry and I felt a little lightheaded, SOOOO... figure a bit of nuts would help with that! 😉

Alright... to the point... 😂🤣... made a delicious Salad, which I used Olive Oil, Balsamic Vinegar, salt and Pepper... ok, sooo... the Balsamic has DEFINITELY some sugars, which I didn't realize that while I was placing it on the salad. However, I didn't use much of it, but its OUT of the pantry hahaha

I also made a drink : Mint Lime Avocado Juice. I used just a bit of Erythritol to sweeten it... it was quite delish!

Ok... do have to say that I wasnt hungry AT ALL and I didn't even finish my lunch. Probably ate 1/4 of the burger... if that... not sure if it's because my body is not used to having so many fats, or because when I cook, I gotta try what I'm making constantly, but it's not like I was eating so much of it. BUT the cashew cheese IS quite filling... so... dunno! 🤷‍♀️

Before going to bed, I had a bit of Pistachio Milk! Mmmm luckily the grocery store was still opened after the movie! 🙂

I had the GREATEST sleep last night! Totally slept like a baby. I'm not sure if its because the two nights before I had shitty sleep, or because I had some chamomile tea and then did yin yoga last night or because I had major releases last night, or because I took magnesium and zinc right before going to bed OR a combination of them all. Regardless, I slept SOOO good and I'm very happy about it. I didn't even wake up like I smoked for years and had no water whatsoever and only woke up once to use the baño and went straight to bed! 😁🙌✌

I even set up my alarm clock for 5.38 am (don't ask me why, my fingers just typed the 38, so I let it be! 😂😝), but someone didn't let me get up... lol which I totally didn't mind and ended up getting out of bed at 6.30... super happy with that since I had been waking up at 8 or even 10 😱 the past days SUPER tired!

Anyways, let's talk about breakfast... Mmm yummy food! 😍😋

I wanted some matcha related thing, so I made a smoothie, because just a tea didn't seem great or satisfying enough at the moment haha but Matcha... I'm ALL about Matcha! SOOOO, here it is! 👇👇

I am currently at the Chiang Mai immigration extending my Visa and since I am ALWAYS prepared (or try to be 99% of the time 😜), I brought the Chia Pudding I prepared yesterday 👇👇

However, to be completely honest, I am not hungry at all and I feel like I'm floating lol might be the Lakshmi Mantra I chanted for 108 before getting ready and leaving the condo... AND/OR the PB Keto Amazingness! 😌

After I got back to the condo, I wasn't hungry at all, but I felt my body needed something. I had some spoons of the chia pudding and then couldn't eat it anymore. But since something was being "craved" I decided to make something with the Almond Yogurt I had. However, at seeing the avocados in the kitchen, I immediately thought about an avocado toast lol that was my go to for anything and well... being Peruvian... avocados and bread is THE thing for breakfast and lonche, the small meal between lunch and dinner... then I thought... Man, I really wish I had an oven to make my own bread! ... mmm perhaps I'll make some pizzette today... hahaha this is how my mind is working at the moment. If that's the case, I'll have to be creative and use the stove to make the cauliflower crust, which I am completely down for the challenge... at this moment 🤣😂😂 I'll see how I feel later.

Ok, back to the food. I love some some cashews, so while I figured out if I truly wanted to eat something, I had a handful of them 👇

It was such an effort to eat it. I wasn't planning on finishing it until my guides told me that it was in my best interest to finish it... I made a complaining sound (😂) and said "Ok, ok!" Then they said "You know you like it that we take care of you"... in all honesty Yes, I do, but sometimes I don't wanna eat what's in front of me LOL

Well... let's go back to the satisfaction factor... I still wanted something, but I didn't want to chew on anything (does that happen to anybody else?! 🤣)... SOOO... Solution: being that I had found a documentary about Angkor Wat, and I'm such a baby, I decided to make some Matcha Green Tea Latte to drink it while I watch it (Plus hugging Fluffy aka my Unicorn and having my Peruvian blanket with me... 😜) 👇

SOOOO... about how I feel... haven't been hungry since yesterday afternoon. My lower back feels kinda funny; its not hurting BUT I can feel so much energy swirling around and it does feel uncomfortable. The thing is that I am also doing The Artist's Way and having major releases from an Inner Dance Immersion I did at the beginning of the month (Yup! Still lol)... that being said, it might be a combination of the 3 as well. I do feel super duper chill so I'm gonna go hug my Fluffs, have my blankie on and watch the documentary as I drink my latte 😏😘✌

We went around town for a bit and the first stop was a coffee shop to chill, eat (not me lol like I said hunger wasn't really there, although I did have a few cucumbers from D's plate... hahaha), read and draw.
I ordered and Unsweetened Iced Peach Tea, which totally reminded me AGAIN that I gotta start carrying around with me some MTC oil! Luckily D is already prepared and has a tiny bottle of it! #score 😏

When dinner time came, I guess I can say I was getting a bit hungry 😌
I really wanted a salad, so I decided to make one and something else with the leftovers, because... can't let food go to waste! I won't be able to tell you exactly what I used for it all, because I mixed some things that were already prepared and added more to it he he
Since I saw on the menu of this one restaurant in Chiang Mai, half of an avocado topped with stuff, I wanted to create my own version... SOOOO I did! 🤗 VOILÀ ! 👇👇

What's inside the avocado is, a layer of a somewhat of a guacamole, topped with the leftovers of taco lunch (Day 3), just added almonds and spinach to it and sauté it all together with a bit of Sesame Seed oil. The salad dressing was a combination of guacamole and the almonds yogurt sauce from the zucchini cauliflower fritters (day 2) and I'm pretty sure I added more avocado to it, salt and pepper. Topped the little salads and avocado with more of the dressing, sunflower microgreens, nutritional yeast and pepper. BAM! 👊 Masterpiece! 😏 he he

AND Matcha Coconut Ice cream. I used a recipe from the same website as a guideline and changed some things. The original recipe was for Vanilla Coconut Ice Cream. I still used vanilla extract, but of course added the Matcha Powder. Instead of sugar, I used Erythritol, but not half of cup, that seemed excessive, a bit under 1/3 of a cup, 1/2 tbsp of Coconut Oil, 1/4 tbsp of MTC oil and 1/3 of hazelnuts. I blended it all but not all the way to keep a crunchy factor 😏... mmm crunchiness! 😍😋

PB Keto - Cuarto Día

Ok... the same thing... man I almost started writing it in Spanish too... I guess that's a sign because I wanted to do it in Spanish lol ok... gonna do it as well!... happened last night, as in not sleeping well. There was SOOO much going on... this car's alarm probably went off 4 times in the middle of the night and the room is probably facing the street, because EVERYTHING is heard! 😥 HAHAHA cars, people, birds... which I totally don't mind lol... but then waking up with the feeling that I smoked a HUUUUUGE bowl and didn't drink any water AT ALL! And weelll... I haven't smoked from a bong since Vegas AND I'm doing this diet without any plant medicine! So it was a little annoying (for not saying SUPER!) Waking up constantly in the middle of the night, annoyed because I couldn't fall back asleep HAHAHA, going to the baño to pee and drinking so much water because I was SOOO parched! And thinking "Dude! I haven't even smoked!" 🤣😂😂 <--- this happened either 3 or 4 times. Everytime I'd go back to bed, I'd be like "Ok, please just fall asleep!" Lol, gotta implement AGAIN, asking my homies ( my guides and Angels 😉) to help me fall asleep. I told D about it this morning and he said I need to have more salt intake, because my body is using all the electrolytes, so need to replace them... Magnesium... we are gonna become besties from meow on! 😏
Other than that, I woke up SUPER freaking hungry! 😱 Normally, I write my morning pages, my journal and meditate first, but today I couldn't, SOOO... I made a parfaitish looking shake! MMMM 😋😋😍
Here it is! Green Shake! Used a quarter of a GINORMOUS avocado (thai's avocados are HUUUUGE!), homemade Cashew Milk, cinnamon, sunflower microgreens (LOOOOOVE them! 😍), Green Superfood (the Amazing Grass one), organic Moringa Powder, Pumpkin seeds, Hemp Seeds, Basil, half tbsp of Coconut Oil, a tsp of MCT oil and some organic Matcha powder. 🤗
Presentation... remember I'm a BIIIG fan of it!... topped it with crushed Cashews, Hemp Seeds, cinnamon, cacao, microgreens and a cashew hehehe ... let's go back to... Claudia/Rukmani likes making her meals very pretty even before this lifestyle change 😝✌
Not gonna a lie... TOTALLY snacked on some nuts while I was blending the ingredients, because... I was STARVING! 😂😂 Anyways... here's the final product! 👇

I have to be completely honest, the only time I was hungry today was when I woke up, after that... I didn't really needed nor wanted anything 🤷‍♀️ but regardless I prepped some things that thought was gonna eat, just in case 👇

🌷Chia Pudding left overs... I probably had half of the jar and added more coconut milk... it seemed so stuck together? If that makes sense... and some cashew milk as well. Put some hemp seeds, cashews, wheat grass powder and mixed it all together. On top, a generous amount of peanut butter (Mmm 😋😋), sunflower seeds, pumpkin seeds, hemp seeds, a cashew and sprinkled it with cinnamon... which is in the fridge and I'll probably have some tomorrow.

I did, however, had a bit of Ice Cream (the one from above)… Only because D mentioned it and I was like “You know what? That actually sounds good!”, but truly I wasn't hungry Haha… and of course I added more things to it 👇

Ok... dinner time... I'm going back to my normal routine to wake up at 5am to actually have time for all my morning practices and being able to go to bed early (I feel like such an old woman typing this 😂😂). Soooo dinner was around 6.30pm BUT, I didn't feel like cooking so we went to the Maya Mall and got some food there. Let's go back to... Claudia did not feel hungry, so she didn't eat much hahaha 😝

Shredded shiitake mushrooms and stir fried eggplant. I didn't have the carrots in it because of the carbs they have and didn't finish the mushrooms, but luckily I got someone that can finish my food 😜🤣😂

Given that I wasn't sure how much fat there was in this meal, when I got home I made some chamomile tea with 1/8 tbsp of MTC oil and 1/4 tbsp of coconut oil. I am quite sure it'll help me sleep since the past two night have been... don't wanna say awful, but not too nice AND I'm already feeling sleepy and I'm about to do some yin yoga 😏✌💖

PB Keto - Tercer Día

Ok so, Sleeping last night was such a task, even though I was SUPER tired. I was able to fall asleep for like an hour or so and then ... wide awake and I wasn't even raving or on anything 🤣😂😂 ... get it? 😝
Kept tossing and turning, super uncomfortable and kept thinking... ok well... pay attention, something might be coming through... I don't wanna fucking pay attention! LOL I wanna sleep! HAHAHA... I read a while back than when you wake up like that, there is a message coming, so pay attention... that was just my stubbornness because I was already in bed and COMPLETELY jelly D was so peaceful asleep! 😂 Oh Lordy... so I fell asleep and then it happened again, then I finally fell asleep and it was the greatest, super peaceful. However, I did wake up super tired.
Meow, not sure if the not sleeping thing is the detoxing of carbs and sugar or what... so, I guess I'll keep observing... not I guess.. I'll observe 😉
After writing my morning pages and meditating lazily (truly, rather than sitting down, I laid down listening to a Lakshmi mantra and chanting it within 🤗 ... better than nothing), I made a breakfast shake:
Half of a small avocado, almond milk, Peanut Butter, vanilla extract, cinnamon, cocoa powder, a tsp of MCT oil, half of a tbsp of coconut oil! 😍😍 topped it with some cinnamon, cacao and little pieces of 99% dark chocolate, no sugar... YUUUUMSSS.

I thought about making the Matcha Latte again BUT when I eat or have so much of one thing, I get bored with it and stop liking it... and that will not be the case with my dear Matcha! 🤗😂 that being said, I did make some tea, Mint tea 😍😍😍 and of course put some coconut oil in it for 😋 and a bit of Monkfruit Sweetener! ✌

SOOOO... 😝 ... after an amazing time at an Arboretum (added a new world in my English vocabulary lol English is my 3rd language and the hardest one for me to learn), hugging trees and playing like a child hehehe came back to make lunch!

The debate was among, pancakes with ice cream and chocolate syrupish thing, pizza OR tacos... we chose tacos 🤗

So here we are:

🌷Sautés red bell peppers and spinach with garlic, onions and cashews. Salt, pepper, cumin, paprika and garlic powder.
🌷Scrambled tofu with sunflower microgreens. Seasoned with garlic powder, coming, turmeric, cajun seasoning, paprika, salt, pepper and nutritional yeast.
🌷Sautés shroomies with nuts, garlic and onions. Salt pepper, cumin and paprika.
🌷Guacamole. I added garlic powder, paprika, mild Tabasco Sauce (it does have some corn starch, but it's one of the last ingredients and didn't use so much of it anyways, just needed a kick!) and nutritional yeast. Sprinkled paprika on top to make it more fancy LOL

SUPER DUPER FILLING! so much that SOMEONE (I'll give u a hint... not me lol) is taking a nap while I blog about it before I forget what I put in each dish lol

The thing is... I use my intuition A LOT when I cook, A LOT. I feel that's the key to make good food and good presentations. Weellll... I also went to Architecture school and what was presented had to be pretty much 👌... literally, otherwise we were told so and felt shitty about our work HAHAHA SOOO demanding that field 😂 but its understandable.

Anyways, I did have a bit of that Ice cream I made, because I saw D eating his ice cream and wanted something delish as well... but it was only a couple of little spoons and just made some more Mint tea with coconut oil to help me digest all the deliciousness I ingested hehehe 🤗

I decided to make my own butter, because I can only find margarine here in Chiang Mai and this one brand of vegan butter that I'm not too keen of. PLUS, i looked up a recipe and it looked super simple and I had all the ingredients. 😁🙌🙌 I'm not really a huuuuge fan of butter, but this one is quite good... perhaps because I made it with love 😉 he he AND I wanna make this cauliflower mash that D heard some guy makes it a lot, and of course it requires butter.

Also... homemade Cashew Milk. I like using Nut Milk for my smoothies... that being said, I ALWAYS have homemade milk in the fridge and with the pulp make raw desserts 😜 hehe. The amazing thing is that the pancake recipe I used said it tastes WAY better with Cashew Milk! #Score 🤗✌

So it comes dinner time and because I've been craving pancakes and had an emo moment (😂 really haha) decided to make some... ok... so it was SUPER tasty and SUPER filling... HOWEVER... they were super delicate and a pain in the butt to cook hahaha not sure if it was the pan, or because I didn't have baking powder and have to substitute it with yogurt and baking soda AND/OR since it's a Plant Based diet, I used chia seeds eggs instead of actual eggs... which has never given me a problem before... anyways it was delish and it satisfied my craving for pancakes AND they weren't even THAT big... see the pic! 😁

Here we go, pancakes with PB butter on the top layer, topped with the PB Chocolate Coconut Ice Cream I had made, nuts and a little PB on top, because I like making things pretty lol presentation, presentation, presentation. 🤗 I also made an avocado shake that couldn't even finish 😂. For that one, I used, a small avocado, homemade cashew milk, PB, cocoa, pumpkin spice, cinnamon, sunflower microgreens and vanilla extract. 😍😍👌👌💖

Morning, morning morning! 🤗 meow that I'm done with my morning routine, I can share about today's Ketowesomeness 😉 he he

Right after writing my morning pages, I made some Match Green Tea Latte. I first made the tea, adding 1 tsp of MTC oil, 1/2 tbsp of Coconut Oil and a small spoon full of crunchy PB! Because... why not! It totally gave me a surprise factor while having the tea! 😜 ... but before going to that, I added some coconut milk to make it a latte because I simply couldn't resist 😂🤣... somehow a latte makes me feel more fancy hahaha SOOO... surprise factor... given that is crunchy PB, it gave me something to chew on throughout having the tea and at the end which made it more interesting, PLUS... I LOOOOOOVE crunchy things hehehe

You can see the oil better in the non Coconut Milk version, which was still delish, but again... lattes, specially Matcha Lattes melt me 😌

I have a Mason jar full of chia pudding in the fridge, which I'm adding PB and nuts, topping it off with a mixture of Hemp seeds, Sunflower seeds, Pumpkin seeds and sprinkle some match powder on top 😘😋😋😍😍🤗 excited for it and the ice cream!

I worked out maybe an hour or so after the Tea Latte and after finishing up the Chia Pudding. I felt good and with tons of energy until... I got a bit light headed... but I mean... after SOOO MANY YEARS of eating TONS of carbs, perhaps that's normal lol I will see if that continues, since working out / practicing yoga is part of my daily routine.😌

It is lunch time! So, I had leftovers of dinner and used it making it a bit different than last night's meal. An entire thing of cauliflower makes 4 servings by the way 😄.
This time I roasted some cashews, sunflower seeds and pumpking seeds on coconut oil with pink Himalayan salt. After a bit, I added mushrooms, sunflower microgreens, cumin and smoked paprika, perhaps some garlic powder, cant remember lol ... I go with the flow of what seems and feels like would be a good choice for it 😉.
Once they were all set, added the cauliflower rice and the veggies with some Sesame Seed oil 😍😍 This time around I plated it with palta (avocado) around, topped it with microgreens and peppers! ANNNDDDD.... VOILÀ ! #MiamMiam 😋😋
And yes, the best part of a meal is the dessert so I had some of the Chocolate Matcha Coconut Ice Cream I made last night! BOOM ! 👊 #Peifection 😍 ( this for all of us Sharpei owners! 🤗😘 )

Cauliflower Fried Rice

So... what has surprised me A LOT is that I am not craving snacks or feel hungry in between meals. I'm normally such a snackers! And carry snacks around with me ALWAYS, because being Plant Based, sometimes can be complicated 😂 and well meow with the Keto lifestyle... perhaps a little more! Anyways, it totally surprised me that I wasn't even hungry until I started making some food... and even before, while I was prepping things, I was thinking how I wasn't hungry but I knew I kinda needed something in my belly. Oh! And the other thing is that even though is the second day, I haven't craved sugars, fruits or carbs, even while grocery shopping this evening, they just seem like bleh! 😁🙌🙌 Perhaps because I'm thinking, what kinda magic can I create in the kitchen today?! Hehe 🤗

I made some Zucchini Cauliflower Fritters. I used the recipe from thebigmansworld.com as a based and added more spices to it 😌. I added garlic powder, Italian herbs, nutritional yeast and a bit of MTC oil. Once they were cooked, I topped them with an avocado thingy (avocado, salt, pepper, garlic powder), sunflower microgreen, a cashew and some pepper on top... gotta make it look pretty... which made COMPLETELY happy! Lol have I mentioned, I'm such a foodie?!?! 🤗💖 Oh! So they are super delicate; I had to be careful when flipping them so they wouldn't fall apart, not so much, but just enough that I had to treat them so carefully lol Perhaps it's because I added the oil?! Regardless, they were quite delish! #MiamMiam 😍

I also made an almond yogurt sauce for them from the simpleveganblog.com. I kinda put more lemon juice than the recipe said, because I don't really measure things... HAHAHA... still worked out perfectly! 😉

Although I was completely full after eating three of this deliciousness, I had a couple of scoops of the chia pudding I made... needed something to change the taste in my mouth after taking B12, which I completely forgot to take it this morning... yes, the liquid form, not the pill form.

Anyways, day 2 was a TOTAL success! Let's see what day 3 brings us!
